In 1904 Japanese Baron Matsudaira visited Texas and said, "I have traveled all over the world, but have never seen any other country to compare with so well cultured for rice". More than 100 years later we use the Baron’s rice to make our delicious saké. Every bottle is handmade using traditional saké methods with only the finest harvested local organic rice! This clear saké has rich apple and pear flavors. Enjoy warm at 120F and chilled at 55F. Produced and Bottled by Texas Sake Co. Bottle via a trade with bu11zeye. Bottled Dec 2011 ("Texan De los Bois" batch). Some sediment in the bottle. Pours a still body, medium pale yellow hue, some sediment, light alcohol legs. Aromas are strong koji, medium umami, some sesame seed, ripe pear, low sulfur, apple, earthy with a mild isoamyl acetate like banana ester. A touch starchy. Flavors are a bit rough, starchy and waxy. Not quite as elegant as most Japanese Junmai. Koji, light cardboard, medium fruit aspects, sharp alcohol. Fruit aspect is of a ripe apple like ester that is hidden behind the alcohol and starchy flavors. Medium body from the alcohol but still feels a bit thin. Musty. Quite warming. Interesting stuff and I applaud the Texas effort, but this bottle seems to lacks some finesse.

Poured a very, very light yellow. Nose was very inviting with just the slighest citrus. In the mouth, it soft and very pleasent. A real gateway sake.

a Texan sake, i thought i’d seen it all when i had a Brazilian sake... . pours a deep white grape juice .. . light melon and grape skin, very light rice .. . a touch of alcohol, enjoyable stuff- i’d drink it again for sure .. . . Hey man, you want to get out and walk, man?
