The Beer Formerly Known as LA TACHE is the table sour produced year-round by The Ale Apothecary. (TBFKA) LA TACHE is made of malted barley & wheat and Goschie Farms Cascade Hops. The hops are used only for aroma as the balance of the beer comes from acid produced by our house lactobacillus culture. She spends 3-9 months in our barrels during a long, relaxed fermentation prior to a month-long dry-hopping (yes, in oak barrels!). Our sensory experience is lemon citrus & fermented orchard fruit nose over earthy undertones. The palate finishes with soft lactic acid balanced by the malt body.

A soft pour into my teku glass produces a quickly disappearing, one finger thick, off-white colored head. The beer is a light gold color that shows a hazy, straw-toned hue when held up to the light. The nose smells tart with an acid spiciness up front, but finishes strong with a mix of oak and vinous notes. Spicy, peppery oak notes, tropical fruit leaning white wine notes, lots of meyer lemon zest, or perhaps it is more tart grapefruit zest. As the beer warms up the hop character takes on a dank, herbaceous edge to it that reminds me a bit of weed.

The beer is quite sour, and despite the quickly disappearing head, the beer foams up quite a bit as it first hits my tongue; effervescent, with a spicy carbonic bite, and the beer gases up as it slides down my throat. The beer is fairly light bodied, which matches well with the carbonation, it has just a touch of viscosity / texture to it, such that it does not come off as watery or thin. The hop character contributes a floral, aural, Meyer lemon notes lead into a solid grapefruit zest character, and a soft, lingering bitterness in the finish. The acidity in this beer softens up a bit as it warms up, it is lactic in character, with a certain yogurt like tartness for sure.

The hop character and lactic acidity melds quite well together in this beer. This is a really nice beer that I am quite enjoying; it is a pretty simplistic marriage of Lactic sourness with dry hop character, but it is well balanced, easy to drink, and something that I can drink without having to think about it.

Poured from bottle to glass. Golden hue with pillowy white head. Aroma is straw, lactic, stone fruit, grapefruit, peppercorn. Mouthfeel is great with a light body and crisp carbonation. Taste is dry with a tart following. Overall this is a nice brew.

2013 bottle. A bit of work to get the cork out. Pale yellow pour, a slight haziness. Big white head. Slightly citrus and a hint of herb in the nose. Effervescent. Lightly sour. Wheat. Some citrus. A little rind on the finish.

Pours a hazy golden yellow color with a white head. Tart, funk, yeast and malt aroma. Tart, funk, yeast, citrus, floral and wheat flavors. Light body and lively carbonation. Tart, funk and citrus finish.

(750ml bottle, batch Sep 27, 2013) Pours a clear yellow body with a medium white head. Aroma of vinous, wood, cheese, herbs, earth, yogurt, and horse blanket. Flavor of vinous, oak, lacto, earthiness, cheese, grass, and citrus with a moderately dry finish.

(2013 bottle) clear gold, fine white bubbles. Nose of cascade hops, lemon, moss, cellar floor, complex and fresh. Taste is even better, lightly hoppy, citrusy Brett, lemon, complex, light and refreshing. Touch of plain yogurt sourness.

A sour slight yeasty aroma withh the fruitieness of wine come from this hazy blonde ale with a white head. I taste at first a farmhouse ale taste then tartness of the wild yeast followed with good combo comes the fruitiness of green grapes. It has an almost medium body with a crispness and alot of carb. Overall a decent brew worth the $25 for sure.

Bottle to goblet Barnyard, lacto, lemon, grapefruit, sour grapes. Amberish yellow, thin frothy head. Starts with some sweetness, then the sourness, but nothing too over the top, some apple, lemon, and funk. Smells amazing, tastes good.
