Bottle from City Beer. Pours light gold with a thick but transient white head and a citrus and yeast aroma. There is a mildly sour light malt flavor with some oak, banana ester and a hint of wine.

Bottle shared by Marcus. Pours hazy lemon with a creamy, fizzy white head. Aroma is sort of citrusy berlinner weiss. Near med body. Flavor is more funky than citrus. Moderately sour. Oak is apparent with time. Tasty ale.

Bottle at Tony/Jim BA Birthday Extravaganza 2013 (Western Springs, IL). Pours a nice well hazed bright yellow straw hue. Murky bright hue with bright creamy white head. Firmer ring sticks around, mellow lacing. Aromas are a bit of farmhouse yeast, dry straw and gentle fruit. Touches of oak, some wine tannic feel meets some lactic tartness, yogurt and lemony. A bit of white pepper, earth and yeast keeps this a bit more even keeled. Initial is lighter end of the fold with some nice tartness, yogurt and lemon hit. Some farmhouse yeast, dryness and lingering estery fruit. Apple, some pear and gentle yogurt. Middle is a bit funky, tart, some gentle yeast grows a bit more back here. Gentle barrel, lingering wine elements as we hit the backend. Somedryness, frui t elements, and a touch of tartness. Yogurty and a bit tart, some lingering fruit sweetness as we finish. Young but interesting. Nose is really nice.

A nice clean lemon yellow with a solid sheet of bone white, super fine foam. Love to watch the solid column of bubbles rising from the center of the glass. Nose carries lemons, tartness, a touch of hay and manure, some hibiscus and some fresh cut grass, as it warms there is a leather and funk. Fucking A. Taste is initially nice and tart - not overly so at all - the tart character is well integrated with a nice earthen bitterness, plenty of lemon flavors, some soil, a bit of mushroom and water cracker. The beer feels light and easy on the palate, maybe a touch undercarbonated or something - although I like the way it feels, I canít help but think it could be better. Another outrageously complex beer from a brewery that reinvigorates my sense of boundaries for what beer is, and can be. Brilliant, artistic, intriguing and layered.

On Cask at Baileyís with a small amount of Brett added to the cask. Poured a flat yet glowing yellow with a no head. Aroma was really unique, I got mustard seeds, slight bit of vinegar, fresh pine (fir tips), some citrus and some apple / pineapple. The flavors were similar to the aroma and this was this first ever Ale Apothecary cask which was a great way to enjoy the beer. Loved it, so different and unique!

On cask at Baileyís Taproomís 4th Annual BelgianFest. Flat deep golden color. Aroma of sweet pickles, lactic acid, and pineapple. Taste is acidic soured fruit, lactose, fir tips, and vinegar. Very smooth and unique.

750mL thanks to brainlair! Pours clear straw with champagne carbonation. High foam, big retention. Nose has their doughy house yeast with flashes of sweet pickle, pineapple, fresh biscuit. Spot on. Taste has some Hill Farmstead style sweet cream butter from the pediococcus, mild Acetic bite gives it saltiness and spice. But the overall flavor is bright dough, fresh pineapple Brett C. Huge aeration in palate is mild oil to balance. Superb.

750 from a grocerís in Bend. Hazy yellow pour with a generous, fine-bubbled white head which fades to a thin rim and leaves moderate lace. Nose is lemons and green apples, and a bit of barnyard funk. Medium body with moderate, fine carbonation. Lemons, leather, light sweetness. Finish is clean, with a hint of Brett funk and butter. Very nice balance on this one. Expensive and hard to find, but worth it.

Alright, the second time Iíve had a beer from this genius out in the woods of Oregon. Seriously, a lifestyle Iím envious of regardless of the beer quality. Paid $28 for this in Vermont at Winooski Bev Warehouse. Having had the last beer from him in Portland, itís nice to enjoy this slowly at home (and split 2 ways). Enjoyed at 50F in a wine goblet (HFS Glass)
A - I would call this a mix between gold and orange. The second glass had some dregs so that one is a bit more cloudy but the first pour was crystal clear and looks like chardonnay. A 2 finger head fades to a thin line pretty fast.
S - The nose is loaded with grape skin and a mild cantaloupe. Sweet and a hint of barnyard funk. Not as complex as the Sahti but certainly a sweet microflora esque nose that isnít too tart or too sweet. Itís very similar to HFS Art in the nose but a lot less lactobacillus and oak.
T - Itís hard not to talk about taste and not talk about the mouthfeel first. Okay, well back to taste. Loads of sweet pinot grapes, sweet muscadine and juicy pears. Lactobacillus and Brett Trois and tannic tastes as well. Itís dry but not insanely dry. The finish is grassy with just a touch of tart.
M - Loving bottle conditioned bursting carbonation mouthfeel. Loaded with dry and peach acidity.
O - I loved Sahati. I like La Tache. It lacks that complexity but is still very good. If this was $10 cheaper, Iíd drink it often. Needs a bit more tartness and it feels high abv for 6%. Certainly a beer to be shared.
