COMMERCIAL DESCRIPTION
The Beer Formerly Known as LA TACHE is the table sour produced year-round by The Ale Apothecary. (TBFKA) LA TACHE is made of malted barley & wheat and Goschie Farms Cascade Hops. The hops are used only for aroma as the balance of the beer comes from acid produced by our house lactobacillus culture. She spends 3-9 months in our barrels during a long, relaxed fermentation prior to a month-long dry-hopping (yes, in oak barrels!). Our sensory experience is lemon citrus & fermented orchard fruit nose over earthy undertones. The palate finishes with soft lactic acid balanced by the malt body.

On Cask at Baileyís with a small amount of Brett added to the cask. Poured a flat yet glowing yellow with a no head. Aroma was really unique, I got mustard seeds, slight bit of vinegar, fresh pine (fir tips), some citrus and some apple / pineapple. The flavors were similar to the aroma and this was this first ever Ale Apothecary cask which was a great way to enjoy the beer. Loved it, so different and unique!

UPDATED: MAR 29, 2014 On cask at Baileyís Taproomís 4th Annual BelgianFest 11/16/13. Flat deep golden color. Aroma of sweet pickles, lactic acid, and pineapple. Taste is acidic soured fruit, lactose, fir tips, and vinegar. Very smooth and unique. From bottle at Saraveza for the 2014 Portland Farmhouse and Wild Ale Festival 3/29/14 (version aged in dark rum barrels with white peaches). Hazy golden yellow color. Aroma is fuzzy peach and funky yeast. Taste is similar to before, but the barrel aging softens it, and the peaches shine through. Very well balanced.

750mL thanks to brainlair! Pours clear straw with champagne carbonation. High foam, big retention. Nose has their doughy house yeast with flashes of sweet pickle, pineapple, fresh biscuit. Spot on. Taste has some Hill Farmstead style sweet cream butter from the pediococcus, mild Acetic bite gives it saltiness and spice. But the overall flavor is bright dough, fresh pineapple Brett C. Huge aeration in palate is mild oil to balance. Superb.

750 from a grocerís in Bend. Hazy yellow pour with a generous, fine-bubbled white head which fades to a thin rim and leaves moderate lace. Nose is lemons and green apples, and a bit of barnyard funk. Medium body with moderate, fine carbonation. Lemons, leather, light sweetness. Finish is clean, with a hint of Brett funk and butter. Very nice balance on this one. Expensive and hard to find, but worth it.

Alright, the second time Iíve had a beer from this genius out in the woods of Oregon. Seriously, a lifestyle Iím envious of regardless of the beer quality. Paid $28 for this in Vermont at Winooski Bev Warehouse. Having had the last beer from him in Portland, itís nice to enjoy this slowly at home (and split 2 ways). Enjoyed at 50F in a wine goblet (HFS Glass)

A - I would call this a mix between gold and orange. The second glass had some dregs so that one is a bit more cloudy but the first pour was crystal clear and looks like chardonnay. A 2 finger head fades to a thin line pretty fast.

S - The nose is loaded with grape skin and a mild cantaloupe. Sweet and a hint of barnyard funk. Not as complex as the Sahti but certainly a sweet microflora esque nose that isnít too tart or too sweet. Itís very similar to HFS Art in the nose but a lot less lactobacillus and oak.

T - Itís hard not to talk about taste and not talk about the mouthfeel first. Okay, well back to taste. Loads of sweet pinot grapes, sweet muscadine and juicy pears. Lactobacillus and Brett Trois and tannic tastes as well. Itís dry but not insanely dry. The finish is grassy with just a touch of tart.

M - Loving bottle conditioned bursting carbonation mouthfeel. Loaded with dry and peach acidity.

O - I loved Sahati. I like La Tache. It lacks that complexity but is still very good. If this was $10 cheaper, Iíd drink it often. Needs a bit more tartness and it feels high abv for 6%. Certainly a beer to be shared.

Cloudy gold pour with a very big white head. Lots of earthy funk in this one. Some unripe stone fruit, crabapples, yeast, dusty and wet blanket, barnyard, toothpicl. Very funky, lightly tart and quite delicious.

Bottle shared by PaulUnwin. Cheers, Paul! Pours a clear yellow-orange with an excited, bretty white head. Nose is sweet malt, caramel, earthy brett, some barnyard, some pepper, and some funk. Flavor is similar with sweet malt, earthy brett, some barnyard, and some funk. Nice balance between sweet malt and brettiness. Light in body with lingering sweet and funk on the finish.

Bottle, thanks to Mac, 08/20/2013. Golden hazy pour, thin frothy head fades quickly, thin ring of lacing. Aroma is tart green apples, green grapes, citrus, bright hay, barnyard must and chardonnay barrel, vinous. Taste is green grapes, nectarine and peach, bright and juicy, vanilla, lightly spiced white wine barrel, light funk. Medium, spritzy body. My only gripe would be the barrel is a bit dominating, but still really tasty.

Bottle... Pours hazy and light yellow with a fleeting white head. The bouquet is both grainy and fruity Ė lemon, to be more specific. Light to medium-bodied with fizzy carbonation. The flavor is nice and tangy, but also a bit too sweet. Finishes crisp and citric. I love the name of this brewery. Bottle courtesy of newcigarz!
