The Beer Formerly Known as LA TACHE is the table sour produced year-round by The Ale Apothecary. (TBFKA) LA TACHE is made of malted barley & wheat and Goschie Farms Cascade Hops. The hops are used only for aroma as the balance of the beer comes from acid produced by our house lactobacillus culture. She spends 3-9 months in our barrels during a long, relaxed fermentation prior to a month-long dry-hopping (yes, in oak barrels!). Our sensory experience is lemon citrus & fermented orchard fruit nose over earthy undertones. The palate finishes with soft lactic acid balanced by the malt body.

750ml bottle shared during #bottlecherwednesday at Beachwood BBQ in Seal Beach. Poured into a tulip. Golden-yellow slightly hazy appearance with a thin white head that quickly fizzes down to nothing. Aroma is lactic funkiness, citrus, tropical fruit, bready malt, and oak. Taste is tart/sour tropical and citrus fruit, grassy hop bitterness, oak, buttery, and vinous on the finish. Medium-light body, smooth, thin texture, fizzy carbonation, dry finish.

Pours an opaque straw colour. Complex raisiny, horsey aroma. Clean, without too many phenols. Came out over-carbonated, at champaign levels, but after sitting for a while it calmed down. Nice long bitter finish.

Cloudy pale yellow with a good bright white head. Aroma is gym socks, cheesy funk (Brie rind), citrus rind. Medium-full bodied, complex on the palate with umami overtones, hint of sourness fading into a tangy sweetness on the finish. Taste is Brie, persimmon, orange peel, Greek yogurt, lemongrass. Yum!

750 ml bottle. I busted one bottle, so I bought another! Worth it. Pours a very hazy orange/straw color with a large, slightly over-carbonated white head. A nose of straw, citrus, some yeast. This is a wonderful beer: hay, straw earthy grains, robust lemon and citrus bitterness, light lactic sourness, fluffy palate. The overall drinkability is very high. The palate and the soft sourness make this just wonderful. Like a Berliner Weiss.

Bottle poured a hazy yellow with thick white head. Smell of bretty yeast and citrus. Taste was heavy brett with a mild stone fruit, wine barrel character. Really nice beer

Bottle, thanks Paul. Cloudy creamy yellow with big white head. Sharp funky aroma, nostril burning, citrusy, smells salty if that’s possible. Taste is sharp lemon funk and then slightly earthy in the finish.

Bottle from City Beer. Pours light gold with a thick but transient white head and a citrus and yeast aroma. There is a mildly sour light malt flavor with some oak, banana ester and a hint of wine.

Bottle shared by Marcus. Pours hazy lemon with a creamy, fizzy white head. Aroma is sort of citrusy berlinner weiss. Near med body. Flavor is more funky than citrus. Moderately sour. Oak is apparent with time. Tasty ale.

Bottle at Tony/Jim BA Birthday Extravaganza 2013 (Western Springs, IL). Pours a nice well hazed bright yellow straw hue. Murky bright hue with bright creamy white head. Firmer ring sticks around, mellow lacing. Aromas are a bit of farmhouse yeast, dry straw and gentle fruit. Touches of oak, some wine tannic feel meets some lactic tartness, yogurt and lemony. A bit of white pepper, earth and yeast keeps this a bit more even keeled. Initial is lighter end of the fold with some nice tartness, yogurt and lemon hit. Some farmhouse yeast, dryness and lingering estery fruit. Apple, some pear and gentle yogurt. Middle is a bit funky, tart, some gentle yeast grows a bit more back here. Gentle barrel, lingering wine elements as we hit the backend. Somedryness, frui t elements, and a touch of tartness. Yogurty and a bit tart, some lingering fruit sweetness as we finish. Young but interesting. Nose is really nice.
