The Beer Formerly Known as LA TACHE is the table sour produced year-round by The Ale Apothecary. (TBFKA) LA TACHE is made of malted barley & wheat and Goschie Farms Cascade Hops. The hops are used only for aroma as the balance of the beer comes from acid produced by our house lactobacillus culture. She spends 3-9 months in our barrels during a long, relaxed fermentation prior to a month-long dry-hopping (yes, in oak barrels!). Our sensory experience is lemon citrus & fermented orchard fruit nose over earthy undertones. The palate finishes with soft lactic acid balanced by the malt body.

750mL. Dec. 2012 date. A: Gold color with bubbles and a faded white head. Nice lacing. N: Yeast, very green apple, lemon, straw, oak. Orange rind. T: Sweet like an apple with a cider like tartness. Some bitterness. M: medium body. Leaves residue on the palate. Alcohol is expertly hidden. O: Very enjoyable. Drinkable with a good amount of oak. Could pick this out of a lineup. Very distinct.

I believe Teri Fahrendorf brought this to share, so I have her to thank! This was opened by DH, Nate and another fellow at Country Boy with a threaded screw and pliers, which was quite a spectacle. Nearly lemonade yellow pour with a small white film. The nose and flavor were vibrant and young- lemon, cheesecloth; acidity is not negligible. Palate is light, slick and flat. Reminds me of Tilquin Gueuze a bit.

750 ml bottle to taster at RBWG (thanks Carl). Looks good; a hazy lemon with ample foamy white head. Smells funky and barnyard. Tastes like it smells with a pleasant mouthfeel. Good beer.

750ml bottle shared during #bottlecherwednesday at Beachwood BBQ in Seal Beach. Poured into a tulip. Golden-yellow slightly hazy appearance with a thin white head that quickly fizzes down to nothing. Aroma is lactic funkiness, citrus, tropical fruit, bready malt, and oak. Taste is tart/sour tropical and citrus fruit, grassy hop bitterness, oak, buttery, and vinous on the finish. Medium-light body, smooth, thin texture, fizzy carbonation, dry finish.

Pours an opaque straw colour. Complex raisiny, horsey aroma. Clean, without too many phenols. Came out over-carbonated, at champaign levels, but after sitting for a while it calmed down. Nice long bitter finish.

Cloudy pale yellow with a good bright white head. Aroma is gym socks, cheesy funk (Brie rind), citrus rind. Medium-full bodied, complex on the palate with umami overtones, hint of sourness fading into a tangy sweetness on the finish. Taste is Brie, persimmon, orange peel, Greek yogurt, lemongrass. Yum!

750 ml bottle. I busted one bottle, so I bought another! Worth it. Pours a very hazy orange/straw color with a large, slightly over-carbonated white head. A nose of straw, citrus, some yeast. This is a wonderful beer: hay, straw earthy grains, robust lemon and citrus bitterness, light lactic sourness, fluffy palate. The overall drinkability is very high. The palate and the soft sourness make this just wonderful. Like a Berliner Weiss.
