COMMERCIAL DESCRIPTION
The Beer Formerly Known as LA TACHE is the table sour produced year-round by The Ale Apothecary. (TBFKA) LA TACHE is made of malted barley & wheat and Goschie Farms Cascade Hops. The hops are used only for aroma as the balance of the beer comes from acid produced by our house lactobacillus culture. She spends 3-9 months in our barrels during a long, relaxed fermentation prior to a month-long dry-hopping (yes, in oak barrels!). Our sensory experience is lemon citrus & fermented orchard fruit nose over earthy undertones. The palate finishes with soft lactic acid balanced by the malt body.

Bottle split at Craft Clerko, picked up at the Growler Guys Bend, 26/06/13. Hazed blonde with a good sized white head. Nose is tarte summer fruit, floral notes, white wine, melon, lightly soured white grapes. Taste comprises funky melon, lemon rind, farmyard, light sours, touch brett. Medium bodied, fine carbonation, crisp and refreshing in the execution. Decent fayre - light sour meets saison.

Bottle shared by Colin @ CBC Clerkenwell. Light gold pour with a small head. The nose is sweet lemonade, wild yeasty funk. A bit of fart. Some cake batter. The taste is pillowy brett. Marshmallow and hints of granny smith apple. Some more lemon, juicy citrus. A bit buggy on the finish. Light body, fine carbonation. Overall, pleasing.

Pours a translucent golden color with a big foamy white head. Nice peachy pineapple brett notes up front with some dank old wood, citrus rind, earthy grain, old hay, pine and slight vinous acidity. Overall a really nice beer, a touch heavy handed on the sweet fruity side but the complexity of the woodsy funk helps balance out the final outcome !

Bottle shared at CBC Clerkenwell - big thanks to Colin for bringing this one. Pours cloudy yellow with a wispy white cream head. Lovely and enticing aroma, bright citrus, light funk, lemon and tangerine. Light to medium sweet flavor with some pale bready malts, light poo and funk, faint hay, lemon. Light to medium bodied with average to lively carbonation. Sweet finish, good and tangy, with more lemon, restrained citrus rind bitterness, poopy barnyard, yeast, a good dose of wild funk. Wonderful beer. Definitely one of the best of the night.

750, corked and strung. Thank you so much, J&A. I thought this was wonderful when I got it. Far better now that it’s in the glass. Holy cow. Pours a crystal clear coppery pale gold with a dense and sudsy white head that sticks around. Big strawberry nose with gentle sweet counterpoints behind that; some moss, a little basement, a slight hint of meyer lemon. Creamy medium body with lively carb. Strawberries, basement, moss, and lemon on the mid palate. No barnyard, no mineral. If this geysers, sorry to say, it is unratable--because it is magnificent when it is in good shape.

750ml bottle shared at Original Gravity in San Jose. Thanks for the pour Audrey! Opened up a gusher, but only lost some of the liquid. Pours a hazy straw color with a massive white spritzy head. Aromas of sour grain, lemon, wet rag, cat piss, moldy pineapple, musty basement, wood. Taste is almost non-existent because of how carbonated the beer is. Extremely high carb, thin mouthfeel, bone dry and zaps all the saliva out of your mouth. Pretty bummed, because of all the great reviews but here is what seems like a rare bad bottle. I’ll save it some face here and note that as the carb level died down, you could pick up more stone fruit and brett flavor on the finish, but the wine like dryness was still a deal breaker.

bottle shared by tom10101, many thanks! pours hazy yellow with a minimal white head, some retention. white wine, white grapes - fat and juicy chardonnay grapes, bretts, some funk, oranges, citrus, restrained lactic notes, spices and herbs, candies, powdered candy. some sweetness - tad too much. bright carbonation, light body - oily, nicely fruity, citrusy and lightly acidic finish. a very nice concotion!

Bottle shared (again) by Tommy, a huge thanks for this rare opportunity! Pours a somehow clear golden (for my pour) and cloudy for the others. Not much head and lacing but I don’t care. Aroma is vinous, with brett making its presence known quite loud. Really nice, I could smell it all night! Taste is not completely dry but that makes for an insanely drinkable beer. Flavors are like a fine white wine with some yellow fruits. Mouthfeel is slick and does not detract you from all the awesomeness. I was wowed, really.

Bottle (750 ml). Clear straw golden with a small white head and some lacing. Aroma is winey and fruity with brettanomyces, wood, light cheesy notes and light sweetness. Taste is moderately sweet and winey with fruits, brettanomyces, wood and cheesy notes again. Medium body. Slightly dry. Winey mouthfeel. Really complex. Nice winey presence. A tad too sweet, but still a world-class beer.

Thanks to Dave for sharing this. Bottled December 21, 2012. Just like the Sahalie, body is light yellow and a bit hazy. Good white head and nice retention. The nose has a bit of faint sulfur and cheese underneath very nice wheat. Behind that there’s some lemon and faint spice. Flavor is similar with a bit less acidity than the Sahalie, but same wonderful complexity. Body is very light with mild acidity. Super easy drinking. Again, just wow. I am really impressed.
