Poured from bottle to glass. Hazy straw hued with fizzy with head that dissipates quickly to thin ring. Aroma is hay, yeast, barnyard, esters, citrus, acidic. Mouthfeel is nice and refreshing with moderately light body and high carbonation. Taste is sweet initially with a slight tartness following and CO2 sharpness throughout the finish. Overall, this is a really nice brew from Ale Apothecary.

This is batch 2, bottled 27SEP12 ABV 10.54% Pours a light straw yellow with a fine white sheet. Nose orgy. So, I’ve never had sex in my nose, but this is like being educated by someone well adapted to teaching different angles, speeds, depths, etc. So, up front, the manure funk, nice something I can’t finger - maybe a bit of anise/wormwood character with a bit of soaked wood. Super complex nose. A nice farm character, really deep character. There’s a good fantome, hill farmstead depth to this beer. Thin bodied with a fine, velvety carb and an ambitiously intriguing finish. Kinda dry, kinda cloying. There is a touch of sweetness. Certainly this is a wild ale, but not in the "traditional" sense - really insane, not tart/sour like most expect. If you though BRUX was fun and interesting, this will blow your goddam cranium to pieces. Serving type: bottle 11-11-2012

Pale gold, hazy, fluffy white head. Aroma: dry, biscuity malt, apricot, pear, tart acidity. Flavor: bready malt with some wheat charcter, citrusy acidity, more apricot, noble hops.

(Was disturbed during our tasting, will have to re-rate! ;) Pours a hazy yellow with a good white head that leave superior lacing. Aroma of fruits (yellow), hops, brett. Taste is sweet with a good balancing tartness, feeling juicy. Carbonation was good, I believe I downed my glass quite fast (to catch up with the others). Really good altough I’m sure I didn’t enjoy all the subtleties.

pours unclear and bright yellow with a very nice frothy white head, good retention and lacing. very dusty and leathery bretts, white wine, juicy fruitiness - pineapple and cantaloupe, hayish and lightly doughy malts, citrus, spices, herbs. bright yet soft carbonation, light body - oily, abv incredibly well hidden, nice and welcoming light acidity, tart and spicy-herbal-grassy astringent finish. smooth. this stuff is excellent!

Bottle (750 ml). Slightly hazy yellow with a small white head and little lacing. Aroma is very lemon/lime forward and reminds me of the Barrel-Aged Flora Rustica that I drank a couple of weeks ago. There’s also winey notes, oak, brettanomyces, yeast and light spices. Taste is also mainly of lemon/lime along with wine, oak, light vanilla, brettanomyces and light spices. Nice citric/acidic touch. Alcohol is very well hidden (our bottle said 11,03% abv). Medium body. Fizzy carbonation. Slightly winey mouthfeel. Slightly dry finish. Very good lemon/lime forward golden ale. The wine barrel give this beer a couple layers of complexity. Really drinkable, especially considering the high abv. It’s my second beer from this brewery (the other was La Tache) and I’m really impressed. I will definitely look for their other beers!
