COMMERCIAL DESCRIPTION
Imperial Witbier, 8% ABV, sour mashed 1-2 days, and fermented with a blend of Berliner Weisse culture and Belgian Witbier yeast. The beer is barrel fermented in large red wine barrels (132 gal. barrels). Raspberries are added to the beer towards the end of fermentation directly to the barrel, and aged on the raspberries for a minimum of 1 month. The Berliner culture contains souring bacteria and the raspberries will add acidity to the beer. Brewed to commemorate Bottleworks 12th Anniversary.
Originally brewed in 2011. Rebrewed in 2013.

Bottle (batch 2), 10/08/2013. Pours dense hazy orange, uneven frothy head dissipates quickly to rest in a swirl on the surface. Aroma is apricot, citrus, raspberry vanilla cream, lactic tart funkiness, oak, fruity red wine notes, earthy barnyard. Taste is lactic tart malt notes, witbier origins evident, mild acidity and citrus, soft raspberry notes coming through the middle, grapes and vinous character to finish. Medium body, mellow sourness and acidity lends a lot of drinkability, well balanced. My favorite sour so far from The Bruery, very nice.

750 ml bottle - batch one, kindly shared by FX Cannelle and sampled with Dennoman and Romain VeryNiceGuy. Pours hazy light to medium yellow with a fine bubbly foamy head; Aromas of strawberries, raspberries, peach, citrus, lytchees and a buttery note. Light body with an immediate yet subtle hoppy note to it. Grassy taste, not really the typical wheaty taste but still slight fruity and citrussy flavours. Incredibly light and sour beer, drinks away very easily.

Bouteille 75cl de et partagée avec Pierre T. Dorée-orangée présentant un léger trouble sur la fin, col blanc épais mais se dissipant rapidement. Arôme restitue bien la framboise avec un bouquet qui ici aussi offre le côté typique de murissage en fût de chêne. Des notes poussiéreuses et de grains avec un léger côté blanche belge. Palais est très subtile et le profil des framboises y est bien restitué sans pour cela trop dominer. On note bien le côté suret, sans savoir que c’était une base de berliner, avec ce profil plus belge de blanche. Je note aussi une pointe possible de coriandre. Un petit côté aigrelet se note du fait du boisé - chêne avec ce profil de vin rouge qui arrive en retrait et vient adoucir, si l’on peut dire, la fin de bouche. Pas mal, même à 8%.

On tap at Star Bar for Bruery Takeover. Pours cloudy. Light lacing. Smooth. Tart. Sour Apple. Very full mouthfeel. A flight bit of tart fruit on the backend with a nice balanced acidity. I found this as my go to beer and is refreshingly smooth and easy drinking.

A steady pour into my teku glass produces a two finger thick, pale-tan colored head. The beer is a hazed, pale amber hue that shows a lighter, honey tinged version of the same when held up to the light. The aroma has a solid lactic sourness to it up front, this is accentuated by a tart raspberry note that lightlyperfumesthe aroma, and there is even a bit of cracker-like and dried straw like grain character noticeable up front. As the beer warms up a hint of burnt plastic becomes noticeable and there is a soft toasted oak woodiness as well as a bit of spicy wood character that softly influences the nose.

Definitely quite sour and biting, there is also a prickly enough carbonation that contributes with its own carbonic bite. There is a spicy, woody character here that has an almost rounded nutty, toasted oak character to it up front. The finish sees a touch of astringency from the oak, and also a lingering tart fruitiness that softly turns to raspberries. The raspberry flavors are actually fairly dry and soft here; there is not enough sweetness for them to be overly noticeable, though they are certainly present here. Especially in the middle and through to the end where a sort of raspberry seed / raspberry skin flavor is nicely present. There is a soft mustiness to the beer, perhaps a hint of earthy spiciness, some hay like notes in the finish, and an oral-nasal influence that makes me think of a field of dried wildflowers. The body is fairly light, the sourness does keep this a sipping beer, and it has a soft fullness to it that keeps it from being overly thin. As the beer warms up a definite red wine like note starts to become more noticeable; the raspberries likely accentuate this a bit, but this has more fruit depth to it, even if it is quite a bit more subtle. This definitely gets a touch vinous with time, which adds a much needed complexity.

Not bad, but lacks the funky complexity I crave; this is not a Lambic though, but I do find that I mostly prefer beers that have more funky complexity and depth. This is still an enjoyable beer though, and I like that the raspberries are just one contributing part of this beer rather than a central focus. I will admit that I was hoping for more from this beer; definitely drink this on the warm side of cool as it opens up more with the red wine barrel character becoming more apparent.

UPDATED: SEP 26, 2013 750mL bottle, pours a cloudy golden with a medium white head. Aroma is very complex, with spices (like coriander), red wine, and some tart citric notes. Flavour brings out very complex notes of spices, red wine, and raspberries. Extraordinarily complex, with all the flavours meshing beautifully. No hint of the ABV, finishing on notes on raspberry and light spice. One of the best Bruery beers for sure. Excellent.

Pours a lovely dark golden color. I don’t get the whole Imperial Wit thing but this tastes great. Spry and tasting of apricots all the way through. Not very sour but the fruit taste makes up for it.

Sample from bottle. Pours out a hazy yellow with frothy white foam. Good raspberry character in the aroma. Quite sour and lactic but nicely so, the raspberry works well here too. Very refreshing. Another impressive beer from The Bruery.
