2016 Bottle Release:
Chupacabra Quinceañera is a refreshing 100% Brett-fermented blonde beer bursting with clean tropical aroma from the unique brett strain used for fermentation. These notes are complemented with the subtle use of Simcoe and Amarillo hops, which add layers of tangerine and passionfruit. It’s quite the party.

Original Release:
Pilot Batch brewed by Sean Flannery. A refreshing 100% Brett fermented blonde beer bursting with clean tropical aroma from the unique brett strain used for fermentation. UPDATED: JUL 15, 2016 Poured from a 750 ml bottle. Aroma is very fruity with lots of pineapple, tropical fruit and cherry pie. A light citrus note. Light grain character with a medium phenolic note. Phenolics are lemongrass, white pepper and clove. Pours a pale, hazy, murky yellow gold with some brown hues and a large, frothy, white head that exhibits good retention. Medium lacing and no legs. Flavor is fairly dry with a light grain note. Moderately strong phenolics with lemongrass, herbal notes, white pepper and light plastic. Medium bitterness. Moderate fruit notes with mango, pineapple, cherry pie and some light citrus notes. Hints of acidity. Finish is bitter and phenolic with a light grain note. Mouthfeel is medium bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall, a decent beer, but not a great one. The phenolic note mixed with the bitterness is not pleasant in the flavor. Aroma is better. All the phenolics are towing the line on plastic and stepping over it a bit.

Big white head slowly fades to cover atop a brassy-golden body with a light haze.
Brett adds light lemon and lime to the nose as a very "dry" almost paper-like white bread character unfolds. Pineapple and grass remain heavy to the finish, with an almost cream-of-wheat-like character persisting as well. No alcohol or flaw.
Very, very dry, borderline over attenuated texture has plentiful "breadiness" of exposed grain from the brett having eaten nearly all the sugar. Pineapple, guava and lime are enjoyable and there’s a mild bitterness, but not a whole lot of rustic or charming character. Just a plethora of dryness in the form of brett acid and malt character. Engaging carbonation and no alcohol or flaw in the flavor. Soft fruitiness from the mostly faded hops helps take some of the focus off the extreme dryness.

750 ml Bottle shared by Adam Chandler, thanks man! Cloudy golden color with lasting bubbly head. Aroma is funky fret, tropical fruits, and mild oak.

Flavor is mild fruits, Bretty yeast, low funk. Hops are faded but help with the balance of the beer. Light airy carbonation and mouthfeel. Pretty nice.

75CL Bottle, bought through Hoarders opened by Clark. gushed slightly. 3 finger yellow white head. Very cloudy, golden orange. Smells really really good! Juicy, bright, citrus, pineapple and loads of wheat. Very good carbonation. Not bright but dense, almost milky. it’s interesting. The taste, fruity, tropical, lovely.

750ml bottle. Thanks RD. Brett yeast heavy. Funk, barnyard, too much brett for my taste. Touch of floral yeast, floral hops. Very light sour. Slight citrus fruit on the back end.

The beer is a deep yellow golden color. It’s fairly hazy, kicked up sediment. Pretty big white head. Some lacing. Good retention. The aroma is light and fruity. Bit of a plastic note. Light melon, a little orange and kiwi. A bit of pepper. Some malt sugariness. Pretty mild. Some funny phenolic flavors as it warms. Taste is similarly a bit drab. Moderately bitter. Sorta washed out. Some hop flavor. A little malt sweetness. It’s somewhat refreshing. The funk is unsatisfying. Light tang. Light bitterness. Eh. Medium-light body. A bit fizzy. Disappointing.

Bottle thanks to Will. Pours a hazy orange gold with medium frothy white head that lasts. The aroma is strong brett, oak, floral. Medium mouth, lemon zest, funky, strong brett, oak, light finish, very good.
