COMMERCIAL DESCRIPTION
Salt of the Earth is our play on a gose. Not to be confused with a gueze, the gose style originated in Leipzig, Germany. It is a wheat beer traditionally brewed with salt and coriander as well as lactic bacteria. Clearly not following the Reinheitsgebot, we figured we’d knock it up a level by using an addition of truffle salt in our gose, adding an earthy and funky element to the aroma and flavor certain to tantalize all of the foodies out there.

[5/10/12] Bottle sample at Sour & Bitter. Clear golden. Aroma of butter, creamed corn and some fruitiness. Sourishj spicy flavor with some fruitiness and a slightly salty-spicy finish. Light to medium-bodied. Lively carbonation. Not a good example of a Gose.

Sour & Bitter Festival CPH 2012. Hazy golden ith a small white head. Bready malt aroma with rather unique notes of beetroot, potato or elderberry. Malty flavour with an odd vegetable note, a pinch of salt and a faint tartness.

Bottle at Sour & Bitter 2012. Clear yellow - white head, Wheaty, light malty, light milkey, light acid notes, citrus, light light bitterness, grainy hay notes, salty notes, light wooden finish. A bit boring.

Sample @ the Sour & Bitter event in Copenhagen. Pours hazy golden with a creamy white head that quickly dissipates while leaving some lacing and trace on the glass. Smell is sweet with cereal, overripe lemons, rose pepper, celery, soup stock and dark bread. Taste is sweet and salty with lemon juice, apricots, celery, soup stock, black pepper, rose pepper and hints of hay and allspice. Mouthfeel is quite strange considering the saltiness but it is medium bodied. finish is sweet and salty with bread, celery and rose pepper. Not my cup of tea.

UPDATED: JUN 7, 2012 (Bottle) Pours cloudy yellow. The aroma holds salt, shellfish, lacto, orange peel, spices, herbal hops, sheet metal, bread and wheat. The flavour is dry, light bitter and light to medium acidic with notes of salt, wheat, citrus, herbs, tart berries, grass, lacto, bread and crackers. The mouthfeel is tart and slim with a light to medium carbonation. Salty and citric finish. Light to medium bodied.

Sour and bitter 2012. Hazy pale golden, rich white head. Salty aroma, metal, herbal, rather strange. Salty flavor, herbal, oregano. Rather strange.

Poured from a 750 mL bottle into a tulip. Thanks to Dunt for bringing this over and then leaving it in my fridge for a few weeks. No seriously, that was great. The beer pours a faded golden straw color, mostly transparent with a little bit of haze. A white cap froths up with the initial pour before slowly fading. Salt of the Earth definitely has a strange nose. There is a light dry malt character that reminds me of a saison, a strong burst of lemon zest, some saltiness, and some vegetal and skunky notes that are not that pleasant. The flavor starts with a light, dry, crackery malt with a little bit of pepper. A strong lemon tartness is full and strong without being piercing. Some other light fruits are noticeable as well. Toward the end of the sip it definitely turns salty. The salt proves to dry the mouth out further and leave my mouth with milder version of what dying of thirst must be like. There is a mushroom and vegetal flavor that covers the entire sip. The carbonation is slightly crisp, and the beer has a smooth, light body. It is very dry, a sensation that is only accentuated by the saltiness. Overall this was rough enough that I did not want to finish my glass.

A - Pours a hazy pale-yellow with a big two-fingers of frothy white head atop. The head fades down very slowly leaving behind some good lacing. S - Aroma is full of funk and sourness with some lemon zest, sea salt, grains, tart fruits, and light spices. T - Starts off with some sourness and funk with some tart lemon and a bit of truffle salt. Through the middle, some grains come through with more funk, yeast flavor, light spice, and butter. The finish is a mix of sour and farmhouse funk flavors with some grain, acidic lemon, truffle salt, and some tart light fruits. M - Medium-light bodied with moderate carbonation. Feels smooth with a sour, funky, and lightly acidic finish. D - Very drinkable. Very interesting mix of flavors with a nice element added by the sea salt. The balance is good with a nice mix of sour and funky flavors.
