750ml bottle, aged two years: Pours a clean golden hue with a huge over carbonated head and good lace. The aroma has notes of wet pale grains, honey, floral yeast esters, light white wheat, grassy hops and just a touch of barnyard vapours. The taste is cereal, honey, grass and herbal twang with very little Brettanomyces character. I am shocked by this and shocked by the fair amount of alcohol still at the forefront after aging, would think it would have mellowed by now. The mouth feel is lively due to over carbonation but a grainy tannic dryness reduces enjoyment. Honestly a tad disappointed in this one.

A - Pours a slightly hazed golden straw with a huge 3 finger head that looked like meringue. Nice uniform patterns of lace left behind.
S - Pears, apples, white grapes, earthy grass, a slight acidic woody aroma, honey, cloves.
T - Grassy citrus bitterness up front, apple, pear, and grape skins, lemon peel, pepper, soft Brett character in the background. Finishes with earthy grains and very dry.
M - Medium bodied, very crisp and dry throughout.
Excellent! Yeast provides nice fruit esters and finishes crisp and dry. Very balanced.

Pours a hazy golden orange with thick bubbly white head and light lacing. Aroma of tart citrus, funky farmhouse yeast and light wheat. Taste follows, but the funkiness does out and everything is nicely balanced. Pretty decent.

October 2012 dated bottle. lightly hazed golden wheat body with a medium sized white head. pilsner malt aroma with some minor banana esters and some pizza crust sourdough strangeness; little to no brett character evident other than some minor citrus notes that could well be from the sacc strain used. lemon oil, vegetables, malt liquor-esque corn ethanol, bananas and plantains and oregano and pizza crust and tomato paste (I know...)... so there’s some problems with the nose, but underneath the malt has nice expression, and I like the black pepper and the mild tropical fruit esters, but something is off and seems out of place. thankfully it tastes mostly clean. it’s lightly sweet with a lingering lemon oiliness and has a enjoyable lightness with soft carbonation, I really dig the mineral quality and some of the esters. if only the malt could be smoothed out a bit, it’s a bit too crunchy and grainy for me.

Pours a golden slightly opaque color with a decent white head that leaves some lacing going down. Scent is some brett funk, grass, and canned peaches. Taste again withe the canned peaches, peppery spice, little banana, and some hope bitterness. Carbonations is good and slightly dry finish. Great for a warm Sunday afternoon.

Bottle thanks to Jstax ! Pours a pale golden color with a huge foamy rocky head that laces nicely and sticks around for the length of the beer. On the nose it has a rustic yeast profile that takes front stage over the light slighty floral malt backbone. Peppery spice, flower petals, pear, grass and a slight vegetale note in the late palate.

bottle split with wife pours hazy gold capped by a silky white head with good retention, leaces a light lacing coat. nose of some mild fruit and a little hay. Taste has elements of sweet crackers with some mild grass and hay on the finish. A small element of clove and earth. Body is solid and the finish is dry.

Bomber bottle share... Thanks, Donny. Aroma is a sour, brett saison smell. The appearance is a murky gold. The taste starts out saison and turns sour. Palate is refreshing and nice. Overall, a good beer, and I usually don’t like saisons.
