Slight, slight mint with a bit of earthyness. This is dry and a bit sour. Very interesting. I can’t wait to try out some more of these guys creations. Top notch.

Murky amber with a huge, rocky white head.
Very spicy in the nose with some earthy, musty notes.
Lots of spice in the taste. Peppery. Brett hasn’t really shown itself, but I think it will lend a nice character down the road. Rich sweeter malt body behind all the spice. Some earthy notes. Some bitterness on the swallow.
Highly carbonated mouthfeel. Good drinkability.

Pour is cloudy orange amber with a giant off white head (4 inches at least). Head has huge carbonation bubbles showing, leaving behind nice lacing. Aroma is phenolic graininess, some floral notes, and rye. Taste is spicy, wheaty, slightly funky and sour. Reminded me quite a bit of Saison Dupont. Really interesting taste profile. Aroma is spice, fruit and a hint of sour brett. Flavor is fruity (ripe apricot, some citrus and pear) with a peppery bite, lightly tart with a rather dry grapefruit finish. Aroma is spicy rye, light fruit (apple), spice (black pepper), light yeast and vanilla. The brett funkiness is pretty reserved, so much so that you might not pick it out of the aroma if you were not told. Taste is lightly kilned malt, light funk, apple/pear, peppery spice, yeast and vanilla. I gave the beer a swirl and got a huge amount of spearmint. SDalkoholic (1005), Chula Vista, California, USA Jul 1, 2008 Bottle from South Bay Drugs. A strong deliverance of true authentic Belgian yeast with a tons of spice being smelled. Appearance is a cloudy golden hue with a fat fizzy layer of head that strives to overflow out the bottle and even over the glass. The flavor is tart and sour with a perfume taste. There are a lot of spice and wild yeast flavors but taste is a little off balance and a peppery aftertaste.
