COMMERCIAL DESCRIPTION
We’ve been hard at work on a recipe that includes – you guessed it – seven different grains. Let’s see if I can name them all: barley, wheat, rice, oats, corn, rye and...spelt. Yep, I think that’s it. The result is a perfect summer beer. It’s about 5% ABV and displays a nice fruity yeast character that finishes dry and slightly hoppy. It’s seven kinds of wonderful!

Draft… Pours cloudy and straw-colored with a mid-sized, creamy, white head. Fantastic retention. The bouquet is full of an overbearing clove phenol – great, if you like that particular phenol. I don’t. Light to medium-bodied and mildly creamy with modest carbonation. The flavor approaches perfect balance. Crisp, dry finish with a whisper of acidity.

On tap @ Cheeky Monk. Fairly hazy, light yellow-orange appearance with a two finger foamy white head. Sweet citrus, barnyard, Belgian yeasty, fairly grainy malty nose. Belgian yeasty, light citrusy, bitter grainy malty, light barnyard flavor with a fairly significant dry bitterness on the back end. Notable hop flavor with hints of rye, corn, and oats.

Tap. Lemony yellow that’s lightly hazy. Wheaty, spicy, and slight tang in the aroma. Tart lemon-like notes feature in the flavor, spice, herbal, and earth tones. Tart but not funky. Thinner body with light carbonation.

draft @ redlight redlight. Tropical fruits on the nose, dried papaya with nectarines. Pours a hazy yellow gold with a thick white head. Spicy and fruity upfront with tropical fruit flavors, papaya and some peach. Finishes very dry, nice session beer.

Tap @ Brouwer’s. Clear, light yellow pour with a vigourous white head which eventually fades to a short white persistent head leaving moderate lace. Not much nose (possibly due to the head), maybe a bit of lemon and yeast. Light body tasting of lemon, spices and not quite as complex as one would expect given the seven grains included in the brew. A good, interesting summer brew that I enjoy much more than I would expect.

(Sample Date: 3/9/2011 Source:Mekong) Light grainy spiciness in the aroma with lots of fruity yeast character. Lightly cloudy straw golden with small white head. Flavor follows aroma. Dry with some coriander like spiciness. Touch of citrusy orange peel? Medium to light body with ample carbonation. Dry spicy finish.

Sampled at mekong on draft after a homebrew meeting. Clear golden pour with small ring of whitish head. Sweet and grainy nose. Flavor is sweeyter than most saisons, and not quite refreshing.
