Tripel Tonnellerie is a 100% barrel fermented version of a Belgian Abbey Tripel. The base beer carries a classically clean maltiness, balanced by a fruity aroma and a dry, spicy mouthfeel. Extended fermentation in oak barrels inoculated with wild yeast allowed the beer to develop the rustic, earthy tones of a classic countryside biere de garde resulting in a uniquely flavorful beer, suitable for beer and wine lovers alike.

Bottled. Pours slightly hazy deep golden with an average white head. Aroma of yeast, funk, wood, spices and citrus notes. Sweet flavor that ends up dry with bitter notes. Medium bodied, oily texture and lively carbonation. A nice Triple. 🌟🌟🌟🌟

Je ne trouve nulle part mention que cette bière contient des bretts, ce qui est pourtant très évident dès la première gorgée. Ma première "The Bruery", qui me déçoit grandement, je dois avouer. Asez mince, peu équilibrée et clairement trop axée sur les bretts. La mousse éphémère et cristalline en témoigne... Rien de réellement désastreux, mais rien de particulièrement intéressant non plus.

Bottle from RS. Pours cleary golden apple, medium fizzy white head, dissipates fairly quickly leaving decent residual and lacing. Aroma is earthy, vinous, oaky, herbal, honey, dust, grass. Flavor is light sweet, light bitter, some stonefruit, grass and dust, oak tannins, hints of Brett. Finish is dry. Body is fairly light, carbonation is high, pretty hot in the end. Interesting.

A steady pour into my teku glass produces a two finger thick, pale tan colored head. The beer is a bright golden / pale-honey hue that shows a brilliantly clear, bright, yellow gold color when held up to the light. As soon as I pop the cap a whiff of woody, spicy oak is noticeable. A closer inspection reveals an up front pale toasted (almost like a saw burn) woodiness that is backed by fruit notes of pear, tart apple, and buttery melon. The oak character, combined with the light fermentation derived fruit notes make for a softly vinous smelling beer.

Fairly dry tasting as it hits the palate for the first time, there is a touch of ester-driven fruit notes towards the finish that add a perception of sweetness here, but just barely so. The fruit character suggests softly of honey dew melon, has a touch of floral pear character, . The malt and oak contribute a soft nutty note, there is also some light hay like grain character, a touch of saltine cracker, but really the oak seems to play the dominant note in the flavor; woody (fresh cut dried wood), spicy (peppery and herbal), and softly buttery. The texture of this beer is fairly light for the alcohol, but has an oak-derived structure to it as well as a bit of malty viscosity that gives this some palate heft.

A bit to oak focused for me; it needs a bit more fermentation character to be well balanced. Having said that, the oak character does not overwhelm the palate, which is definitely to be commended.

Clear light yellow pour with a white head. Herbal nose. Slightly hoppy too. Belgian character. Mild sweet finish. Some herbal in the back end too. Nice.

Bottle thanks to Will. Pours a clear gold with a medium frothy off white head that lasts. The aroma is strong fruity yeast, straw, and oak. Medium mouth, tart, oak, brett, lemon zest, really nice.

Draft at the Bruery. Pours opaque yellow gold with a fizzy white head. Smells like lemon, yeast, light herb. Tastes like dry cracker malt, dry herb, citrus hops, and yeast. Light body and low carbonation.

Bottle... Pours lightly hazy and yellow with a small, creamy, white head. Great retention. The aroma is woody, musky, peppery and lightly fruity with a suggestion of stone fruits. Full-bodied with adequate carbonation. Well-balanced. Wow. Not overly phenolic. Not crazy sweet. A touch tangy and fruity and lightly funky. A bit dry and vinous in the finish.
