For our third beer in the ‘12 Days of Christmas’ series we decided to take a little creative liberty when approaching the barrel aged version. We were able to acquire an abundance of syrah grapes from the Santa Ynez Valley, which are full of rich, dark berry flavors and a wisp of black pepper which seemed almost too perfect for Three French Hens. The grapes were pressed and the juice was added to the beer which was then aged in wine barrels for one year. The result is a satisfyingly tart, dark ale with hints of oak and dried fruit that finishes with a clean, vinous character typical of a deep red wine.

Bottle at a dinner hosted by Patrick Rue at the Gingerman in NYC. Although this was quite fun to try, it is miserably over the hill. The fruity vinuous notes have degraded into a vinegar-ish tartness. The beer is nearly flat and a bit harsh.

Bottle, aged a few years. Deep purple hue, a short-lived medium-tan head. Raisiny aroma, molasses, marzipan, dates, booze. The acidity diesnt show up much in the nose, but it’s definitely there in the flavor. Dark dried fruits are prominent again, but paired with strong balsamic David and tart apple acidity. This bottle’s about three years old now, and it seems that the friity Belgian flavors are smoothing out while the tartnessaintaims its intensity. More time probay won’t do the beer any favors; drink it now.

"a surprise appearance since i didnt even know this existed. i like the 3FH, but this took that beer to a whole nother level. big juicy syrah fruit and leather flavors atop an already pretty nice dark belgian strong. vinous and a little tart (though I would not class is as a sour as RB did)...just a barreled BSA. Good stuff. If I’d had this solo I may have even scored it higher."

UPDATED: OCT 31, 2014 Bottle: Thanks, Kevin. Ruby tinted, dark brown chestnut body with a foamy beige & khaki head that quickly turns into a mild collar. Aroma of vinous red wine, red grape, soured dates & raisins, light vinegar, funky & musty oak, a light caramel malt base, hints of plum, & a slight lactic tartness. Flavor is tart, vinous, full of red wine reminders, red grapes, plums, raisins, all sorts of dark fruits underpinned by a lightly acetic & vinegery sourness. A touch of boozy wine near the finish, turning more sweet as the tartness fades. Unattenuation is apparent; mostly sweet & sticky dark fruit finish with light oaky must. Gotta say, much better than expected.

Bottle shared by b3shine in late December ’13. Pours a hazy amber/copper color with a small off white head. The aroma and flavor have some sweet malts, tart berries, red wine, oak, hints of pepper, herbal character, interesting and I will try this again and update my rating.

Old Ale Alpharetta rate. Big ripe fruits/berry, red wine, oak, a bit spicy, vinegar. Nice depth of flavors, but the vinegar touch isn’t my favorite.

Bottle... Pours murky and brown with a brief, off-white head. Funky, sour aroma - oak, acidic red wine, caramel and sour cherry. Full-bodied with modest carbonation. The flavor is a balanced blend of sour notes, bitterness and roasted malts. Short, tart finish. Bottle courtesy of biggsbowler!

750 mL bottle shared by Trey at Ale Alpharetta. Pours a dark, cloudy brown, with a thin film of tan head. The aroma is light chocolate, cloves, tart grapes, with only a hint of tannins. Sweet, with a mellow, vinous sourness. MEdium body, sticky, and fairly astringent. Overall, this is a nice, well-made dark sour, with good wine-ish notes, but doesn’t really seem that special.

Bottle shared by b3shine. Poured a cloudy reddish copper color with an average frothy off-white head that mostly lasted with fair lacing. Moderate to heavy sour dark fruit and wood aroma. Medium to full body with a dry smooth texture and soft carbonation. Medium to heavy sour & sweet fruit flavor with a medium to heavy sweet & sour finish of moderate to long duration. This is a solid beer.

Murky reddish brown. Opened 12/25/13. Tart grapes on the nose, with a touch of oakyness as well. Big grape flavor, with a nice tartness and oak background.
