For our third beer in the ‘12 Days of Christmas’ series we decided to take a little creative liberty when approaching the barrel aged version. We were able to acquire an abundance of syrah grapes from the Santa Ynez Valley, which are full of rich, dark berry flavors and a wisp of black pepper which seemed almost too perfect for Three French Hens. The grapes were pressed and the juice was added to the beer which was then aged in wine barrels for one year. The result is a satisfyingly tart, dark ale with hints of oak and dried fruit that finishes with a clean, vinous character typical of a deep red wine.

Unclear medium to dark brown colour with a small to average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, caramel, chocolate, tart, funky, red berries, fruit, grape - wood. Flavour is moderate to heavy sweet and moderate acidic with a long duration, tart, berries. Body is medium, texture is oily, carbonation is soft. [20120510]

Bottled. An unclear dark red-brown beer with a tan head. The aroma has notes of over ripe fruits, over ripe fruits, caramel, and grapes. The flavor is sweet with notes of brettanomyces, wood, caramel, over ripe fruits, and grapes, leading to a dry and tart finish.

Bottle at yespr. Hazy orange-red coloured with a small off-white head. Fruity and light acidic aroma of red wine and dried fruits. Light acidic flavour of red wine and dried fruits. Tart finish.

Bottle 75 cl. Courtesy of thagr81_us. Pours a hazy, nutty brown with a tiny, off-white head. Tart, rotten fruit aroma - think Flemish red. Medium body, low carbonation an initial brown sugar sweetness but soon the woody tartness chimes in, a red wine tartness that really cleans your tastebuds. Delicious. 250113

Bottle @ Sour & Bitter 2012. Pours a hazy amber brown color with a small off-white head. Has a fruity woody spicy slightly vinous citric aroma. Fruity malty spicy vinous vinegar citric flavor. Has a fruity woody spicy citric finish.

Dark brown - red beer. Small off white head. Cream and sour fruit on the nose. Dry airy palate. Tart sour fruits - raspberry. Sour red wine. No real barrel smoothness here! Finishes semi dry and tart. A bit much with tartness.

Sour & Bitter 2012. Very dark amber/brown beer with a beige head. Sourish woody aroma, oaky, dry, vinous, alittle roasted. Sourish fruity flavor, citrus, grapes, apples, some woody notes.

Dark amber pour with a small off-white head. Strong grape and red wine aroma on the nose. A light balsamic note, a bit of grass, a hint of alcohol, and lots of wood. The flavor is nicely tart with a strong balsamic character. Some wood, tannins, and grape skins. Mild malt sweetness, tons of grapes, and red wine. Much better than the regular version.
