For our third beer in the ‘12 Days of Christmas’ series we decided to take a little creative liberty when approaching the barrel aged version. We were able to acquire an abundance of syrah grapes from the Santa Ynez Valley, which are full of rich, dark berry flavors and a wisp of black pepper which seemed almost too perfect for Three French Hens. The grapes were pressed and the juice was added to the beer which was then aged in wine barrels for one year. The result is a satisfyingly tart, dark ale with hints of oak and dried fruit that finishes with a clean, vinous character typical of a deep red wine.

Sweet lord jesus. Pours muddy and reddish brown with a thin head. Complex tart aromas with the slightest funk, smells absolutely amazing. Refreshingly tart, light cherries.

Bottle. Pours a dark brown with light tan head. Lots of deep rich flavors throughout. Tart berries, dried fruits, oak and red wine. Tartness adds to these flavors and ties it all together. Mouthwatering and wonderful.

Trois Poules Français Sampled on 4/28/2012. This sour/wild ale pours a dark reddish brown color from a 750ml bottle. Medium sized off white foamy head with good retention and nice lacing. The aroma is fruity. sweet, grapes, tart and woody. A medium bodied sour/wild ale. The malts are fruity, grapey and sweet. The hops are earthy. Decent carbonation. Tart and funky, woody and grapey. A lot of petite syrah character. Tart, woody and funky. Very nice beer. Very reminiscent of Cantillon or Rodenbach. Very complex sour ale. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is tart, funky and sweet.

A: Deep Amber Hue, Passes Mild Light, White Head Ring, Some Lacing S: Sour Mash, Musty Grapes, Chardonnay T: Grapes, Sour Mash, Chardonnay M: Decent Carbonation, Medium Bodied, Semi Sour Overall, a nice wine barrel aged sour ale with great sour taste.

A - Dark brown-red with a thin finger of frothy khaki-tan head. Fades very quickly. S - Sweet dark caramel malts, grapes, oak, vanilla, red wine, Belgian yeast, pepper, clove, and other spices, candi sugars, touch of funk, and a bit of booze. T - Sweet dark caramel malts, grapes, raisins and other dark fruits, some sourness, red wine, oak, vanilla, Belgian yeast, pepper, clove, other spices, candi sugars, some funk, and a bit of booze. M - Full bodied, moderate carbonation. Smooth with a sour, sweet, and warming finish. D - Great complex BSDA. Good overall balance and the barrel comes through nicely.

"a surprise appearance since i didnt even know this existed. i like the 3FH, but this took that beer to a whole nother level. big juicy syrah fruit and leather flavors atop an already pretty nice dark belgian strong. vinous and a little tart (though I would not class is as a sour as RB did)...just a barreled BSA. Good stuff. If I’d had this solo I may have even scored it higher."

Bottle 75 cl. Courtesy of thagr81_us. Pours a hazy, nutty brown with a tiny, off-white head. Tart, rotten fruit aroma - think Flemish red. Medium body, low carbonation an initial brown sugar sweetness but soon the woody tartness chimes in, a red wine tartness that really cleans your tastebuds. Delicious. 250113

Botella. Hazy amber colour, small white like head. Pleasantly fruity berry tart sweet aroma. good mouthfeel. Flavour is sweet and fruity, really nicely tart with berries and some wood to it too. Niiizee.

Dark brown pour, small tannish head. Aroma of oak, red wine, grapes, some red wine vinegar notes, dark dried fruit. Flavor is sour, grapes, red wine and oak. Really a nice winey beer!
