The primary component of our “White Oak” ale is a 100% barrel aged wheat wine that we affectionately refer to as “White Oak Sap.” Essentially a “summer” barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we’ve added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate…hence the name.

Bottle @ Dangerous Bottleshare 11.0. Thanks to rasmusott & vestergaard. Orangish pour with tiny lacings. Nose has loads of white chocolate, vanilla and some toffee. Taste has loads of vanilla, bourbon, boozy, light lingering tartness, white chocolate and a dry finish.

Bottle. Pours a clear, IPA-like amber with a big, frothy, short lasting, white head. Aroma is very sweet with vanilla and, guess what, white chocolate. And lots of it!! Raisins, caramel fudge, coco nut, prunes, booze. Taste is sweet, but not at all as sweet as expected. Slight tartness, tannins, wood, surprisingly dry, caramel sweetness. Weird taste, but still pretty good! Average carb and oily body.

Shared at a tasting hosted by Steebo on February 13. Non-infected batch from 2012. The pour is a cloudy dark amber with a foamy white head and some good lace. I was not expecting this for the color, that’s for sure. The aroma is heavy on the sweet chocolate. There is vanilla and cocoa present with a nice bourbon to it, but it is really sweet. The flavor is also incredibly sweet (probably why it was referred to as diabetes in a bottle). It’s almost drinking like a chocolate mead. There is a light maltiness on the back end. The mouth feel is pretty light, but the carbonation helps it hang around nicely. The aftertaste is sweet chocolate, light vanilla, and a touch of bourbon. This is pretty good, but definitely a sipper. Too much sweetness in there

C4PAF pre-tasting. Hazy deep golden with a small white head. Heavy milk chocolate and vanilla aroma with a touch of coconut. Sweet, milk chocolate and candy flavour. Dessert sipper, but not very drinkable...

2014 bottle thanks to soonerchamps! Murky brown pour with almost no head. Aromas are caramel, coconut, bourbon, and raisins. Taste moderately sweet. Honey, caramel, butterscotch, and light bourbon. Seems to be lacking something but it’s hard to figure out. No richness and it just comes off a bit bland. Very surprising for a 14% Bruery beer. Also, I didn’t get any vanilla or cocoa in the taste or aroma. Very disappointing especially after already trading for and drinking a 2013 bottle that was infected.

Bottle @ WWT IV, small sample. Clear golden to orange color, short frothy head. Aroma of white chocolate, bit vanilla, bit coconut, slight funky. Taste is a bit sour, pineapple. Bit thin in flavor. Wonderful aroma, but taste is probably gone bad.

Bottle at WWT tasting. Slight hazy golden with white head. Sour grains, coconut, raw vegetables, vanilla, light cognac, hay, wood. Mostly medium sour with very light sweetness. Medium bodied with dry feel. Disappointing.

Bottle @ WWT IV. Clear golden color, virtually no head. The aroma is indeed white chocolate. Taste alcohol, a slight hint of sourness and indeed a hint of white chocolate. Average to medium body, a bit fizzy carbonation. Meh..
