COMMERCIAL DESCRIPTION
The primary component of our “White Oak” ale is a 100% barrel aged wheat wine that we affectionately refer to as “White Oak Sap.” Essentially a “summer” barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we’ve added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate…hence the name.

Tasting at Bruce’s pad. Hazy amber beer, small white head. Palate is suprisingly light and crisp. Mild fine carbonation. The promised white chocolate is delivered and whilst it is sweet it isn’t sickly sweet as white chocolate can be. Alcohol spice and a little dried fruits. Nice beer but still more aging would not go amiss.

Bottle shared in London - many thanks to Manic Mitchell. Pours lightly hazy gold with a fine, white foam head. Odd nose, some dry cocoa, a. It of ripe fruits. Big sweet flavor, some alcohol kick, banana, pale toffee. Full bodied with fine carbonation. Warm finish with lots of sugary pale bread, some toffee, apricot, actual white chocolate. A bit of chalky cocoa. Decent. Pretty drinkable. Like it but it is a bit odd.

UPDATED: MAY 13, 2014 Bottle thanks to young Kenny. It pours hazy golden amber with a minimal white head. The nose is sweet, candy, white chocolate, lactose, vanilla and icing sugar. The taste is bitter-sweet, candy, white chocolate, alcohol hit, syrup, cocoa, coconut, some acidity and earth with a dry finish. Full body and decent carbonation. Not bad....I expected the sweetness might get all too much for me, but it actually didn’t.

Suprised im giving this one a rating even close to this high. Poured a lighter orange color with a white head. Aroma was of oak, chocolate, and vniall, and caramle. Flavor was pretty much exactly what I was hoping for, white chocolat,e not other way to describe it really, im not even a big fan of white chocolate, just like that they did it well and kept it from beeing too sweet.

I was really surprised by this one. Opened in line while waiting for King Sue. Aroma is almost exactly like white chocolate. Big vanilla in there. Taste is sweet and the alcohol isnt as powerful as the 14% would make you think. I was pleasantly surprised here.

Bottle from my Summer Secret Santa 2013, big thank you. Hazy orange golden color with huge white head. Aroma of malt, white chocolate, vanilla. Sweet malty taste, wit vanilla, white chocolate, loads of white chocolate, caramel, coconut, bourbon, wood. Alcohol is strongly present. Extremely tasty, full bodied unusual beer.

Shared at Ottawa crew’s March tasting, not sure who I traded with for this but thanks!. Full disclosure off the start - I do not like white chocolate at all and that totally biases my rating and review for this beer. Pale amber with no head. Smells exactly like white chocolate but boozy and very sweet and a hint of mint. Mild carbonation, moderate body, slightly chalky on the finish along with a lot of sweetness and booze. Just not my thing.

Bottle: Poured a golden amber color ale with a nice large foamy head with good retention and some lacing. Aroma of white chocolate is actually surprising with some residual sugars and some vanilla. Taste is also very reminiscent of white chocolates with some vanilla and quite a bit of residua sugars. Taste is quite over-the–top so it is probably best to drink this in small doses. Body is about average for style with good carbonation with no alcohol being easily apparent. Interesting experiment for sure but not something I would seek on a regular basis.

On tap at the Bruery. This one is aptly named, I’ll give them that. It pours a golden color with an off white head. The aroma is white chocolate, caramel and vanilla. The flavor is massive with vanilla, caramel and strong alcohol. Very sweet and cloying, like white chocolate. A guilty pleasure maybe?
