The primary component of our “White Oak” ale is a 100% barrel aged wheat wine that we affectionately refer to as “White Oak Sap.” Essentially a “summer” barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we’ve added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate…hence the name.
2015 Release = 16.6% ABV. ABV varies by vintage.

kindly shared by Oldmanriver, thanks a lot. Four stars for the experimental energy of The Bruery. Wonderful complex aromas of vanilla, white chocolate, Malibu liqueur, coconut, poppy and vanilla joghurt and rich creamy cheesecake. Far less impressive in taste, though. Sourish, yogurt with chocolate, very sweet, very alcoholic. Guess it’s just the way it is with that monstrous abv. Brave experiment and surely a "beer" to remember.

Sample at first sunday. From the name I was expecting a sweet chocolate bomb. When I took my first sip though this is a much more subtle, sweet, malty and caramel sort of drink. Syrupy, a little alcohol burn on the back end of the palate. Coconut and honey sweetness for sure.

Shared large 2014 bottle. Pours slightly hazy, light orange-amber with a decent head. Odd but not unappealing fruity and chocolaty aroma. Tart fruit and chocolate flavor. Very tart. Overall: unusual.

(Dégustation avec kzeon et yourilevesque. Merci à Alex pour le partage! Vintage 2014) Le liquide est assez mince lorsque versé dans nos verres. La mousse est fugace. Au nez, l’impression de chocolat blanc est bien réelle mais devient inquiétante lorsque mélangée avec ces parfums boisés un peu suret. Au goût, les saveurs sucrées et surettes ne me plaisent pas particulièrement. Et que dire de tout cet alcool... En bouche, le liquide montre un corps plutôt faible pour le style avec un pétillement plutôt doux. La finale est chaude et piquante. Difficile à boire. Intéressante expérience mais pas dans mes cordes.

Un très grand merci à Alexandre pour le partage! Unique en son genre, ce vin de malt présente une couleur ambrée et une tête fine mais persistante. Une attaque de cacao et de vanille ou l’alcool occupe une place importante. J’adore cette contradictoire dualité entre ce que je vois et ce que je hume. L’effet chocolat blanc est parfaitement réussi! Le liquide est mince et vineux dû à un évident vieillissement en barriques de vin blanc. Encore une attaque chocolatée et vanillée sur fond malté et clair. J’aime être tant déstabilisé car l’ensemble est cohérent et brassé avec intelligence. Curieusement plutôt courte en bouche, la finale est longue en alcool.

750ml bottle of 2014 release. Pours an orangey brown color without much head. Medium bourbon and the vanilla comes through at the end.

750 ml waxed bottle shared with a friend. 2014 edition from Preserve Society. Not infected thankfully. Hazy golden orange with off-white head. Aromas of white chocolate, cocoa, caramel, some booze. Tastes of caramel, big booze, toffee, oaky bourbon. Medium body with a dry finish. Nice aroma, too much booze on the taste

Yellow-orange pour. Nose is boozy, tart gren apples. Taste is the same. Clearly infected but still somewhat drinkable.

Bottle. Hazy gold with a small head. Nose is super sweet and boozy. Little nuance to it. Flavor is simial. Somewhat tart and hot sugar bomb. Oily. Meh.

Thanks cards04 for sharing. Murky orange body not much head at all. Odd but appealing aroma of white chocolate but also tart and oaky. Cereal and vanilla. Taste is oaky tart Touch of citrus grains. Touch of booze but abV well masked for the high abV.
