The primary component of our “White Oak” ale is a 100% barrel aged wheat wine that we affectionately refer to as “White Oak Sap.” Essentially a “summer” barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we’ve added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate…hence the name.

Thanks to pushkinwow for this. Pours clear with a gold haze. Aroma is light white chocolate and vanilla. Taste is light, sweet barley with vanilla and white chocolate. Light coconut round out a delicate palate but the beer seems to be lacking int he body but very nice.

A lightly hazed golden amber Barley Wine with a thin white head. In aroma, sweet fruity caramel malt with loads of vanilla, alcohol, a bit cloying. In mouth, sweet vanilla and chocolate, White chocolate, mints, alcohol warmth, a bit unbalanced. Bottle from pushkinwow.

Bottle shared @ Dean’s aged pale lager tasting, courtesy of me. Many thnx to bytemesis for sending me this ’should be’ beautiful beer. Cleary a horrible infected bottle. Aroma of week-old vomit with fromage du tête.. One sip was enough and words cannot describe what it was.. awful. Would love to try a good bottle of this, because it should be amazing.. only this wasn’t.. I’m going to cry now...

Bottle labeled 14.25% abv. Not sure how to tell the age of this bottle but I have had it for at least two years so it was definitely the batch before the infection issues. It has been staring at me in the cellar always thinking when I would open it up. Well...... Random Friday for no special occasion it is! Pour has a bright orange color with a bit of white foam that held a ring on the glass. Aroma is really nice with vanilla bean, oak, sweet malt, white chocolate, and some mild heat considering the punch in this one. Mouth feel is medium light with little sugar on the tongue and good carbonation for a huge barreled beast. Flavor has plenty of vanilla, smooth oak, mild bourbon, white chocolate, sweet malts, and a surprisingly mellow finish. This has aged incredibly well and is drinking just beautiful right now. This particular bottle or batch is right on like the white oak batches I have hit as well.

Bottle shared at tasting. Obviously infected, shame. Aroma of puke and sweets. Fairly heavy infected acidity in the flavor with the sweetness behind. Hope to revisit this and relate after this disappointing infected waste.

Courtesy of rayl101Bottle: The aroma consists of moderate-heavy chocolate, vanilla, light caramel, bourbon, honey, and a hint of citrus. It pours a dull dark orange with a small off-white head. The flavor starts with a quick dose of citrus a touch of honey. The finish has moderate-heavy vanilla, moderate chocolate, light caramel, bourbon, and faint coconut. It’s medium-full bodied with moderate carbonation. Overall, it’s a really tasty desert beer and I really like how the bourbon and vanilla work together. The key is small doses though as I imagine a large sample would wear on me quickly.

750ml with a big thanks to travis. Pours out a hazy golden topped with a ring of white. Nose is great vanilla beans coconut white chocolate and barrel. Taste is as the nose no infection on this one. Some burn vanilla and lots of sweetness.

(bottle - 750 ml) Hazy orange pour. Lots of malt, white chocolate, dark fruits and bourbon. Flavor is pretty much the same. Dark fruits mixed with sweet white chocolate and a lot of vanilla from the bourbon. Much like a yogurt covered raisin. Sticky sweet but could be good with a few years on it.

Bottle. For me, the smell and taste were the same. White chocolate and raisins. It reminded me of those yogurt covered raisins they had back in the 90’s just with a big alcohol burn. It was to young. I think with a few years on it, it can be great
