The primary component of our “White Oak” ale is a 100% barrel aged wheat wine that we affectionately refer to as “White Oak Sap.” Essentially a “summer” barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we’ve added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate…hence the name.

Bottle from my Summer Secret Santa 2013, big thank you. Hazy orange golden color with huge white head. Aroma of malt, white chocolate, vanilla. Sweet malty taste, wit vanilla, white chocolate, loads of white chocolate, caramel, coconut, bourbon, wood. Alcohol is strongly present. Extremely tasty, full bodied unusual beer.

Shared at Ottawa crew’s March tasting, not sure who I traded with for this but thanks!. Full disclosure off the start - I do not like white chocolate at all and that totally biases my rating and review for this beer. Pale amber with no head. Smells exactly like white chocolate but boozy and very sweet and a hint of mint. Mild carbonation, moderate body, slightly chalky on the finish along with a lot of sweetness and booze. Just not my thing.

Bottle: Poured a golden amber color ale with a nice large foamy head with good retention and some lacing. Aroma of white chocolate is actually surprising with some residual sugars and some vanilla. Taste is also very reminiscent of white chocolates with some vanilla and quite a bit of residua sugars. Taste is quite over-the–top so it is probably best to drink this in small doses. Body is about average for style with good carbonation with no alcohol being easily apparent. Interesting experiment for sure but not something I would seek on a regular basis.

On tap at the Bruery. This one is aptly named, I’ll give them that. It pours a golden color with an off white head. The aroma is white chocolate, caramel and vanilla. The flavor is massive with vanilla, caramel and strong alcohol. Very sweet and cloying, like white chocolate. A guilty pleasure maybe?

Thanks to pushkinwow for this. Pours clear with a gold haze. Aroma is light white chocolate and vanilla. Taste is light, sweet barley with vanilla and white chocolate. Light coconut round out a delicate palate but the beer seems to be lacking int he body but very nice.

A lightly hazed golden amber Barley Wine with a thin white head. In aroma, sweet fruity caramel malt with loads of vanilla, alcohol, a bit cloying. In mouth, sweet vanilla and chocolate, White chocolate, mints, alcohol warmth, a bit unbalanced. Bottle from pushkinwow.

UPDATED: APR 17, 2015 March 08th. 2014 Bottle shared @ Dean’s aged pale lager tasting, courtesy of me. Many thnx to bytemesis for sending me this ’should be’ beautiful beer. Cleary a horrible infected bottle. Aroma of week-old vomit with fromage du tête.. One sip was enough and words cannot describe what it was.. awful. Would love to try a good bottle of this, because it should be amazing.. only this wasn’t.. I’m going to cry now... Updated, new bottle thnx to Homer321. Again a clear golden pour with a small bubbly white head on top. Aroma has white chocolate and faint bourbon notes with cheesy touches. The white chocolate is a bit faded out in the flavor, a slight sweet note in the back as well. It’s decent, but a bit disappointing unfortunately. It should’ve been so nice, but it’s just a bit alcholic and dry.

Bottle labeled 14.25% abv. Not sure how to tell the age of this bottle but I have had it for at least two years so it was definitely the batch before the infection issues. It has been staring at me in the cellar always thinking when I would open it up. Well...... Random Friday for no special occasion it is! Pour has a bright orange color with a bit of white foam that held a ring on the glass. Aroma is really nice with vanilla bean, oak, sweet malt, white chocolate, and some mild heat considering the punch in this one. Mouth feel is medium light with little sugar on the tongue and good carbonation for a huge barreled beast. Flavor has plenty of vanilla, smooth oak, mild bourbon, white chocolate, sweet malts, and a surprisingly mellow finish. This has aged incredibly well and is drinking just beautiful right now. This particular bottle or batch is right on like the white oak batches I have hit as well.

UPDATED: APR 17, 2015 Bottle shared at tasting. Obviously infected, shame. Aroma of puke and sweets. Fairly heavy infected acidity in the flavor with the sweetness behind. Hope to revisit this and rerate after this disappointing infected waste. (Original rating 0.9).

Rerated 17/04/15, thanks to MrHangover - definitely not infected this time. Pours clear dark golden with an off white head. Aroma of white chocolate, milk chocolate, toffee, sweet malt, vanilla and bourbon. Flavour is light heavy sweet. Full bodied with soft carbonation.
