The primary component of our “White Oak” ale is a 100% barrel aged wheat wine that we affectionately refer to as “White Oak Sap.” Essentially a “summer” barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we’ve added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate…hence the name.
2015 Release = 16.6% ABV. ABV varies by vintage.

Via trade with JHogan4. The aroma is - holy shit! - white chocolate!!! Really!! The aroma is chocolate, vanilla, oak, light bourbon. The appearance is a hazy orange, hazy, white head. The flavor is chocolate, vanilla, oak, spicy, bourbon, pretty sweet. The finish is sweet, bourbon warming. Medium in body. Really cool. Definitely not for those who dislike sweet beers. I really like their use of bourbon barrels here. The bourbon makes its presence known, but doesn’t overpower. It just complements the beer nicely. Well done. Thanks, Jeremy.

Hand bottled mini sample courtesy of LinusB. Pours tiny hazy deep golden with a very small offwhite head that doesn’t leave much trace on the glass while dissipating. Smell is intense, malty and sugary with caramel, toffee, vanilla fudge, charred wood, caramelized pecans, roasted coconut, white chocolate, hay, minerals, bourbon alcohol and hints of lemon peal and figs. Taste is sweet, bitter, salty, malty, tiny fruity and boozy. Mouthfeel is soft, round, viscous, syrupy, boozy and medium to full bodied. finish is sweet, bitter and salty with caramel, toffee, salt water, vanilla, white chocolate and bourbon alcohol. Bit too big, boozy and salty but perfect for a 30 ml sample.

A: Clear brown coloured with a white head that goes away fast. N: Vanilla, figs, booze T: Vanilla, cocoa nibs, bourbon O: WOW! Vanilla bomb. It’s boozy but I really enjoy the hardcore flavours!

Pours clear, dark honey golden with a thin pale buff head. Aroma delivers yeasty, malty and chocolate notes. Flavor continues the chocolate tone plus malty and fruity notes. Mouthfeel delivers average body and fizz. Brew up some white chocolate

Pours a murky dark amber color with a immediately fading beige head.
Chocolate, earth, grape and toasted oak, with a pina-colada-like bourbon element and some oxidation, as well as a fair amount of sharp, grainy booze.
The flavor is just a putrid mess of sour wheat-like character, toasted oak, spoiled chocolate milk and lightly sweet caramel on the end, replete with grape and lightly bitter vanilla notes. Loose/low carbonation and not intensely sweet, but the huge wheat dryness doesn’t work at all with the barrel character and what the hell is all of the grape-like character.

Poured from bottle 2014 14.3abv thanks Airforcehops. Nice hazy orange pour with a thin white head. Aroma of vanilla white chocolate vanilla and grain. Taste follows aroma nice beer.

kindly shared by Oldmanriver, thanks a lot. Four stars for the experimental energy of The Bruery. Wonderful complex aromas of vanilla, white chocolate, Malibu liqueur, coconut, poppy and vanilla joghurt and rich creamy cheesecake. Far less impressive in taste, though. Sourish, yogurt with chocolate, very sweet, very alcoholic. Guess it’s just the way it is with that monstrous abv. Brave experiment and surely a "beer" to remember.

Sample at first sunday. From the name I was expecting a sweet chocolate bomb. When I took my first sip though this is a much more subtle, sweet, malty and caramel sort of drink. Syrupy, a little alcohol burn on the back end of the palate. Coconut and honey sweetness for sure.
