COMMERCIAL DESCRIPTION
The more I drink and think about Pale Ale the more endearing it becomes. Pale Ales are straightforward beers and their charm comes from dedication to simplicity. But there comes a time in every brewers life (read daily) when he or she wants to add that little bit more... Hence the Dry Hop! What are dry hops? Simply hops added in the fermenter or cask - not boiled in the kettle. Dry hop additions do not impart the bitterness that kettle hops do and add a surreal hop resin texture to the beer as a result. In the end we are left with our beer a little less balanced than our status quo but the energy that the prominent hop note affords is pretty cool as it stands apart. Cascade is a classic hop for this technique as it lends a heavy grapefruit note which operates as an acidifier to the malty brew.

Had this at their tap room in saint Louis Fall 2012. Everything I tasted was good to great. Thin head. Lots of citrus.

Draft at the brewpub. Pours a clear orange-amber color with a small off-white head. Aroma was not what I expected for an EPA, with a good dose of citrus hops, caramel malts, and even some pine. Flavor is about the same; citrus, caramel, toast, and earth. Light-bodied, with a dry, bitter mouthfeel and medium carbonation. Very good.

Pours a hazy deeper orange amber with a medium creamy off white head. Aroma of toasted malt, nuts, spicy hops and light citrus. Flavor of peanut butter, toasted malt, toffee, spicy hops and light pine.

On tap at Martin City Brewing. Comes reddish amber with a nice white head. Aroma of citrus, pine, and malt. Taste is grapefruit, pine, and caramel malt. Well made and very nice to drink.

Shaker pint draft at the Martin City Brewing Company in Martin City, Missouri. The pour is a hazed darker orange with a 1/2 inch slightly off-white head that leaves behind nice lace. The aroma is big fresh leafy hops - floral, citrus, resin along with caramel malt. The taste is the hops up front, fresh and bright. As with the nose, a nice blend of floral citrus resin, balanced nicely with the body of the caramel malt. The palate is light to medium bodied, lower level carbonation and a dry floral finish. Clean easy drinking beer.

Tap @ The Civil Life. Pours a hazy, dark orange appearance with a tan head. Nice grapefruity, somewhat piney hoppy, lightly toasted malty aroma. Slightly chewy, nice grapefruit citrusy, somewhat pine, moderately bit but refreshing flavor.

Tasted on tap at the brewpub. It poured a nice, mostly clear amber color with thick white foam, lasting with some lace. The most hops-forward Civil Life offering yet. Flowery, resiny, citrusy, earthy, some pine, very nice and not overwhelming. Some residual malt sweetness, fruit and caramel underneath. Very tasty. Struck me as an historic English IPA.
