COMMERCIAL DESCRIPTION
Eidolon is a collaboration between our brewer, Sean Burke, and friend Sean White. A sour farmhouse ale with Meyer lemon juice and peel, jasmine green tea and flowers, and New Zealand Hallertau hops. It is then matured in wine barrels with two strains of brettanomyces.

Bright tart sour fresh lemon notes some funky undertones wine notes underlying fresh tea notes as well . Ducking complicated nose. SSmells really good. Pours golden w a thin head nice clarity. Tons of lemon herbal tea notes some definite wine notes funky underlying yeast tones. Dry fruity sharp finish. Prickly carbonation. Slightly metallic at times. Interesting and nice beer.

the nose is sweet tarts and sour apples. the pallet is sweet tarts with barn yard funk, horse blanket and sour apples.

25.4 oz bottle. Clear electric orange with a coating of big bubbles. Nose is lemon, apricot, orange peel and toffee with light funk and vinegar. Crisp medium body with lively carb; juicy then dry. Taste is up front sour but never overwhelming. Lovely lemon with a hint of sweetness give way to green tea and slightly bitter flower petals and grass. Clean finish with bread. Beautifully nuanced.

Cloudy orange-yellow with a small pale head. Aroma is lemon juice, sour funk, sour plum. Tart on the palate with a background sweetness, very well balanced. Taste is sour plum, lemon, tropical fruit, red currant. Delicious!

Bottle... Poured hazy, golden with a thin head. Nose of fleshy, perfume-like fruits similar to apricots. Some tartness with yeast complexity and lots of herbal and citrus notes. Some vinous barrel notes but mostly fruity with a moderate tartness and strong yeast presence.

Bottle with Carla from Belmont Station. Pours a lightly hazy amber brown with almost no foam. Smells sour and vinigary with hints of peach. Tastes sour with hints of peach/apricot, wheat and rice.

Thanks to the kind soul who brought this to the recent Tampa Tasting. Pours a hazy yellow with a white head. Nose is cheese, tropical fruit, herbs, and some tart fruit. Flavor is similar with fruit, herbs, citrus, cheese, and some brett. Medium in body and a nice sour overall.

white wine focused flavor.
strong long grape skin tannins.
growing tea leaf astringency as it opens.
mild acid.
a lot at play here: white wine acid, oak, dried fruit, brett plastic.

Pours a hazy orange with no head. Aroma of lemon, grapefruit and mint. Taste follows, bitter minty and slightly tart. Very nice slightly sour beer ---Rated via Beer Buddy for iPhone

750mL bottle from the brewery. Served in LA tulip. A: Hazy copper with a thin lasting lacing. This is a sour saison in wine barrels, so I’ll expect a darker color. N: Blast of saison yeast and some leather and earthiness from the wine barrel. Cedar and green tea grassiness. Maybe a little bit of Brett here, but not much (spiked with 2 strains.) The Meyer Lemon is very prominent. T: Dry and tannic. Lemon juice. Very earthy, and it’s easy to tell this has tea in it. As mentioned before this is very tannic and woody, and it’s very close to the wine with the cherry, leather, and earth. Pine and cedar. Sharp lactic acid mixed with the citrus sting. Solidly in between saison and sour. This one is hard to put my finger on - there are a lot of flavor components here but they work together harmoniously. A little bit of alcohol. M: Very, very dry. If you’re looking for refreshing, this is not your beer. If you’re looking for a palate scraping, go no further. O: I want to keep drinking this and drinking this in order to further explore its depth. Quite good with the potential to become marvelous as the brettanomyces eat away at the tannins. Be aware this has a ton of wine characteristics to it.
