Commercial Description:
Earlier this year owner and brewmaster Paul Philippon gave himself a much needed day off. The other brewers at Duck-Rabbit took this lull in supervision to brew a special batch of beer to celebrate the day. When Paul returned he was greeted with Paul’s Day Off fermenting away in the tank. Paul’s Day Off is a Farmville style black ale. This beer is unfiltered, unpasteurized, and unsupervised. The beer is brewed with a variety of 7 different malts and a large dose of American hops. After fermentation the beer took a vacation in 23 year old pappy van winkle barrels before going back into the tanks for a final dry hopping of Nugget, Simcoe, Amarillo, and Chinook hops. The beer weighs in at around 9% and displays a big aroma of citrus, pine, vanilla, oak, and bourbon. The flavor shows layers of depth with hops, malt, and barrel character all melding together . The beer will be available draft only in North Carolina. We hope you enjoy Paul’s Day Off as much as we did, because who knows when or if Paul will ever take another one.

Bottle at PilsnerPeter’s Spring Gathering brought interestingly enough, by a different Paul. Pours a brown to black with a medium beige to tan head. Everything about this beer just screams busy. Sweet chocolate, plums, prunes, hops.... it’s just all over the place. Yet, somehow amidst all of that, it’s still a really nice smelling brew. Flavors are nice and roasty with a nice carbonation helping out all of the roast and chocolate notes. Finishes a bit boozy and with a nice bitterness.

Hand bottle shared by Dickinsonbeer at Peter’s NY gathering - chunky brown pour - soapy lace - nose of rum, brown sugar, cookie dough, cherries, oak, vanilla - tastes of bourbon barrel, cherries, coconut, caramelized sugar, spicy alcohol notes - honestly, this tastes like most of the stylistically ambiguous barrel-aged american ales I’ve ever had - not bad, but not great, either - it just tries to bludgeon your palate into liking it, with mixed results.

On tap at Tyler’s in Apex. Black with a fuzzy light tan head. Aroma is delicious oak barrels, vanilla, hidden maltiness supports the lighter bourbon notes. The taste is sweet malts, caramel, chocolate, coffee. Then big vanilla, very creamy.

Draft at The Flying Saucer in Raleigh, swillin’ and chillin’ with Emcagee, JCB and OldStyleCubFan. Black with a tan head. Chocolaty malt nose, coffee, pretty roasty. Burnt sweet caramel flavors, chocolate and coffee, citrusy bite late. Very smooth. Good stuff!

Draft at The Flying Saucer in Raleigh NC. Black bodied with a light, foamy tan head. Aroma is dark malts, coffee, roasted notes, chocolate and hops. Taste is dark malts, light vanilla, chocolate, light coffee, hops, and caramel. Body is meidum-full with a creamy feel to it. Ends with more chocolate, vanilla hints, hops and dark, roasted malt. Very nice!

Draft @ Capones. Dark brown/almost black with no head. Aroma of bourbon, vanilla, light floral hops, and coco. The taste was the same with a nice floral hop profile in the finish. Malty with, ffirm mouthful.

[Draft @ Capones] Poured a dark brown color with a small, off white head that left light lacing on the glass. Aroma of vanilla, floral hops, bourbon, pine, citrus fruits, and caramel malts. Taste of grass, citrus fruits, pine, bourbon, vanilla, cocoa, and light alcohol in the finish. Oily mouthfeel.

On draft at Capones. Pours a black with a small light brown head. Aroma of light vanilla, bourbon, hops and chocolate. Taste of light vanilla, bourbon, malt and piney hops. Excellent.
