Commercial Description:
Earlier this year owner and brewmaster Paul Philippon gave himself a much needed day off. The other brewers at Duck-Rabbit took this lull in supervision to brew a special batch of beer to celebrate the day. When Paul returned he was greeted with Paul’s Day Off fermenting away in the tank. Paul’s Day Off is a Farmville style black ale. This beer is unfiltered, unpasteurized, and unsupervised. The beer is brewed with a variety of 7 different malts and a large dose of American hops. After fermentation the beer took a vacation in 23 year old pappy van winkle barrels before going back into the tanks for a final dry hopping of Nugget, Simcoe, Amarillo, and Chinook hops. The beer weighs in at around 9% and displays a big aroma of citrus, pine, vanilla, oak, and bourbon. The flavor shows layers of depth with hops, malt, and barrel character all melding together . The beer will be available draft only in North Carolina. We hope you enjoy Paul’s Day Off as much as we did, because who knows when or if Paul will ever take another one.

Appearance: opaque dark brown, wispy off white head
Aroma: sweet chocolate covered cherry aroma
Flavor: rich chocolate flavor, lots of bourbon is in perfect balance with the chocolate, vanilla sweetness bring out the richness in everything, touch of the fruity tartness from the aroma
Overall: perfect chocolate bourbon candy, paul needs to take off more days to let Frumpty and Facto play with each other

(PPSG09, HB1L, thanks Dickinsonbeer) Medium tan head atop dark brown body. Aroma is moderately sweet, raisin/plum, caramel, some smoke, chocolate. Taste is moderately sweet, chocolate/caramel, some smoke, light alcohol. Medium-full body, light acidity, creamy.

On tap at Capone’s. Poured a deep brown color with a smaller sized off white head. Aromas of roastiness, chocolate, some dark fruits, some woodiness, vanilla, and toasty. Tastes of roast, chocolate, caramel, toasted nuts, woodiness, vanilla, and toffee.

@Pilsner Petes East Coast Gathering-hand bottled–pours a retaining tan head and dark brown with orange color. Aroma is dark malt-molasses, some wood/earthy hops. Taste is dark malt-anise, ashy, secondary earthy hops. Not my taste. Thanks dickinsonbeer/PAUL for sharing.

Bottle at PilsnerPeter’s Spring Ratebeer Gathering. Brown pour. The aroma is pretty nice. Soft and chewy with a touch of light vanilla oakiness. Sweet chewy finish. Rich, deep crystal malt character. Heavy stewed fruit and a long lingering oakiness. Light cookie dough sweetness and more sweet oak. Really pretty tasty.

Draft at Capone’s. Pours mahogany/deep ruby with 1-finger off-tan head and great lacing. Nose is dark malt, vanilla, dark choc, hops, oaky, earthy. Tastes rich, oaky and bourbony, earthy, peaty, with heavy dark malt, dark choc, slight black cherry, backup hops. The flavor in this is very complex and layered, but subtle, and the palate is hefty and very well balanced for a beer this big. I had nop idea the ABV was this high on this one, and will gladly take the high outlier position on this. As unique a beer as i have ever had, starting from a 4 ounce sample at Capone’s, then moving to a pint, then saying to my wife, "I have to growler this!" Another marvelous beer from Paul and Duck Rabbit. Paul, it was a pleasure to meet you tomight, and keep up the good work, man!

[Draft @ Capones] Poured a dark brown color with a small, off white head that left light lacing on the glass. Aroma of vanilla, floral hops, bourbon, pine, citrus fruits, and caramel malts. Taste of grass, citrus fruits, pine, bourbon, vanilla, cocoa, and light alcohol in the finish. Oily mouthfeel.

PPRBSG09. Bottle. Pours a brown body with a tan head. Thanks Pizza head for sharing. Sweet bourbon and vanilla oak notes. Creamy and sweet with a nice dark fruit character of raisin and more vanilla. Mild etoh warming, nicely done.
