COMMERCIAL DESCRIPTION
Named after the 6th sense, Umami is a hybrid ale with 2 different yeast strains and 40% wheat. Barrel aging gives it a sour counterpoint to the malt sweetness.

2014 - 12% ABV and aged 9 months in Jim Beam barrels. THIS DOES NOT HAVE PLUMS ADDED, see Umae Umani entry for that.

On tap: The aroma consists of light-moderate citrus, vanilla, oak, and bourbon. It’s a hazy dark orange with a small white head that fades to a thin film outlined by a thicker ring. The flavor starts with a quick dose of citrus, caramel, and toffee. The finish has light-moderate vanilla, bourbon, and oak. It’s medium bodied with mild carbonation

Bottle shared by tmoney99 - thanks again, Tom! 2015 vintage. Pours a hazy, dull orange gold with an off-white ring for a head. Notes of vanilla, caramel, wheat, oak, toasted sugar, apricot, funk, pineapple, cedar, florals, and spice. Medium-bodied, with low to moderate carbonation and a sweet, dry mouthfeel. Complex and unexpected in the directions it takes.

Bottle shared by Tmoney99. Pours a hazy amber color with a thin off white film. The aroma and flavor have caramel, tart fruit character, the Jim Beam barrel is pretty forceful on the finish, booze, maybe this will smooth out with more time.

Draft. Poured clear reddish amber color with an average frothy white head that mostly lasted with very good lacing. Moderate to heavy dark toasted malt, alcohol and wood aroma. Medium to full body with a smooth texture and flat carbonation. Moderate to heavy dark sweet & sour flavor with a medium to heavy dark sweet finish of moderate to long duration. This is a complex standout beer.

Draft to taster at the brewpub. Looks good; a hazy deeper apricot with foamy eggshell head. Smells malty with notes of dark fruit, caramel, and twangy oak alongside a touch of toffee and maple syrup. Tastes like it smells with. Some vanilla as well. Mouthfeel is medium full-bodied. A great example of the style.

On tap at The Livery. Pours amber with an attractive beige head and a fruity bourbon aroma. There is a yeast- laden wheat flavor with plenty of lingering Jim Beam vibes.a nice sipper.

Tap: Dense amber body, brown hints. A little muddy with a huge khaki foam perched on top. Heavy, sticky butter toffee, bourbon warmth, spicy oak, sweet caramel candy drops, a hint of vanilla, & even a kick of dense maple syrup that’s left lingering. A fairly heavy beer, but still goes down nicely for being 12% ABV, no doubt. Sweet, slightly booze, but damn tasty.

Bottle @ Steve’s house. Thanks to brokensail for sending. Pours a reddish orange appearance with a thin off white head. Orange citrus, spicy veggie, twangy aroma. Twangy, pineapple, orange citrus, chewy malty flavor. Some oak and tannins. Twangy. Ehhh.

Pour out of 750 ml bottle, hazy orange pour with white head, aroma brought notes of vanilla, earth, grass, hints of caramel, hints of grain, yeast. Taste is a mix of grass, caramel, toffee, dark fruit, hints of vanilla, oak, slight sour fruit notes. Pretty tasty, but sweet.
