COMMERCIAL DESCRIPTION
THEREZÓPOLIS RUBINE é uma autêntica Bock de cor vermelho intenso, composta por maltes tostados do tipo Munich e malte Vienna, equilibrados pelo leve amargor do lúpulo e pela leveza da água mineral das montanhas. De maturação prolongada e corpo denso, seu aroma traz notas de café e toffe. THEREZOPOLIS RUBINE tem teor alcoólico de 6,5% vol, e apesar de ser conhecida como cerveja sazonal de inverno, estará presente o ano inteiro na carta da Cervejaria Sankt Gallen e poderá ser apreciada sem preconceito. Aprecie a 5º graus. O nome Bock na verdade vem de EinBeck, cidade natal deste tipo de cerveja. Em alemão também significa cabrito (relação com o cabrito montanhês). A THEREZÓPOLIS RUBINE harmoniza muito bem com carnes de caça (javali), paleta de carneiro, batatas gratinadas, salada de beterrabas, creme de shitake ou de lentilha, feijoada, goulash, foie gras, ossobuco, pato assado, pimentão recheado, rabada e nozes. A Rubine harmoniza muito bem inclusive com algumas sobremesas. Com creme brulée fica perfeito. Note: this is a Traditional Bock

Apresentação inicial boa,bonito rotulo bem informativo,no copo coloração belíssima vermelho rubi,formação de creme bege volumoso inicialmente mas que não se mantem;aroma delicioso de malte tostado com notas de frutas vermelhas,frutas secas(ameixa) e tofee;sabor acompanha o aroma,porem nesse já aparecendo o amargor do lúpulo e o álcool,todos bem equilibrados e balanceados,corpo médio,retrogosto levemente adocicado,bem equilibrada,bom conjunto,boa bock.

Amber color, hazy liquid and average head. Aroma of black plum, malt caramel and some wood notes. On the palate it has a light body. It could be bitter.

I guess you might call this a bock or something. It is red and clear w/ a foamy head. Its nose is malty w/ a bit of nutty oxidation. It’s full bodied and sweet but not really malty. I gets a bit heavy quick but nothing too horrid.

60cl bottle. Nice looking. HAs a generous best-by date. This one is a bit oxidized already, some caramel malt, light spice. Not doing to o much for me.

Empolguei no começo, mas me deixei influenciar pela indicação para dias mais frios... Fora isso, gostei muito, o gosto de café é interessante e a cor é muito bonita! Acompanhei com uma bela macarronada num domingão de verão!

Brown with white head, nose is candy. Roasted coffee, caramel, some sourness and a long bitter finish. Raises sweet souvenirs of Andechser Doppelbock Very nice beer.

60 cl bottle from a market in Itaim, SP. Bright red color, very intense, clear, short but lacing offwhite head. Fruity nose. Aroma is definitely Vienna malts, slight caramellish with ripe fruit overtones, roasted malts in the finish. Taste is sweetish, sugary. Light body, carbonated, fizzy on the toungue, creamy texture, rather fluffy. Warming, and more and more as it warms up. A pretty solid sweet dunkelbock, quite unexpected for the area.

UPDATED: DEC 15, 2014 600ml bottle served in a mug glass. A: Pours a dark amber color forming a medium, creamy and thin bubbled yellow head. Medium retention and some few molasses and lingering lacings formed and left in the glass. A thin bubbled layer remains for long time on the top S: Strong notes of toffee, caramel and crystal malts in the nose. Sweet, malty and biscuity. Flowery and bit citrus hops. Light boozy end T: As the nose. Sweet upfront. Strong notes of toffee, caramel and roasted malts. Citrus hops profile, light bitterness. Crispy, malty and bready profile as expected M: Medium and molasses body. Medium carbonation. Caramel in the aftertaste O: Good drinkability. An authentic and well done German Bock.
