750ml bottle pours amber in color with a massive off-white head that leaves some decent lacing on the glass. Aroma is mild but pleasant with light fruits and caramel. Taste is light fruit and caramel sweetness with a mild hop bitterness. An easy drinking winter ale that is tasty and recommended for those seeking a lighter winter ale.

UPDATED: FEB 22, 2012 Bottle. I am drinking this on 15.2. though the bottle says best before 01/2012. Medium airy beige head, pretty stable. Hazy amber to brown colour. Almost cidery-like aroma, sour apples, notes of caramel, spices. Taste is medium sour, hints of sweet and bitter. Somewhat dry finish and a lot of belching after this one.

12oz bottle. Light brown, thin head. Aroma of cedar chest filled with moth balls. A bit of spice. Caramel candy and some nutmeg maybe. Light flavor of toasted malt. Light bodied.

Not the best beer that I have had from Thiriez. I got lots of funk, cherry pie, brett, caramel malt notes,some toasted malts, hint of cinnamon. Overall kind of a let down, but I was expecting more and built myself up. I still like Thirieze but I will avoid the Noel for this year.

33 cl. Gusher with a lava-like roiling foam, atop a deep orange-brown opaque body. Nose of sour berries, nutmeg and other earthy spices, toasted chestnut, and a sharp acetic acid note. Flavor starts with lots of tart cherry and berries, then has some toasted nut and oak. Hints of caramel, spiced wine, and sweet-salted peanut. Medium body is lightly carbonated and watery, but finishes with a spiced wooden dryness. Drinkable, but not something I would seek out. Extra overall point for being Interestingly different.

Hazy brown, big foamy beige head. Smells nice - cranberry and lemon, plus some other spices I can’t quite distinguish. Flavor is tart, crisp, and fruity, plus a little bit spicy. I get some balsamic vinegar, too.

Bottle sample at a tasting at Dagan’s place. Thanks Oren. As "Biere De Noel". Hazy brown with a big white head. Somewhat infected aroma with yeast, some brett, spices and some fruitiness. Flavor has a bit of sweetness, some sourness, some spices, yeast and some fruitiness. A dry finish. Light-bodied and over-carbonated. Weird.

Sehr spritziger Antrunk, leicht sauer, deutlich hopfig und stark nach Kräutern. Dieser insgesamt würzige Antrunk rückt im hefigen Mittelteil etwas in den Hintergrund, die Kräuternote wird um ein Malzaroma ergänzt stärker. Herber Abgang, die Hefigkeit weicht schnell. Bottle. Bit of a gusher. Dark amber almost copper with big head. BIG yeast and strong warm spice scent. BELGIAN spice and lite spice with a bit of sourness. Somewhat refreshing. Lots of sourness.
