Bottle: Unfiltered.
The first Christmas beer produced by Thiriez since 1997. Fewer hops than the Blonde; lightly toasted malts for color, and a hint of spice.

Sample at the brewery in April 2008 (on tap I think). Amber with a slight haze. Lightly fruity aroma with a hint of toffee. Clean on the palate with some slightly bready malts. Slightly acidic edge on the finish. Touch of residual sweetness. Easy drinking. Fine but nothing particularly out of the ordinary.

Color is nice, dark and a little red. Smell and taste are off. Spices in the smell. Taste is a little sour. Not very good in my opinion.

Extremes Gushing beim Öffnen, ins Glas ergießt sich ein sehr trübes orangebraunes Bier mit sehr viel Schaum. Geruch fruchtig würzig, Karamell. Geschmack röstmalzig, schokoladig, leicht fruchtig, etwas herb, leicht würzig.

Bottle. Bronze beer with a huge off-white head. Sweet caramel aroma with lemony citrus, spice, earth, and toasted grains. Then a long wait while the head just sat there. Earthy, peppery flavor with good caramel and some fruitiness. Medium body. High carbonation. Finishes dry. LIngering earthy spiciness.

Bottle. Low fluffy white quickly disappearing head. Hazy amber body. Sour berries grapefruit aroma. Grapefruit sour berries thin bodied flavor. Low carbonation, short aftertaste.

Bottle, opened to share with my in-laws. Aggressively carbonated gassy head atop a golden amber body. Musty caramel aroma, not a good start. Musty caramel apple flavour. This bottle is off. Boo.

From a bottle in Paris, November 2006. Medium to dark amber color. Pretty decent head. Very cloudy with sediment. Aroma of yeast and amber malts. Slightly fruity flavor, lots of yeast. Malt is really thin, as is the body. A bitterish flavor that might be hops but is really different. A touch sour. There is also a bit of that earthy taste that often comes in biere de garde, but not so prevalent here. There is a definite graininess, although a very simple and rustic one. OK, but the malt is not really there. Lacking a bit of punch. Somewhat bland. Highly carbonated. Earthy, malty, slightly caramel beer, but not really impressive.

Head is initially average sized, frothy, off-white, mostly lasting. Body is hazy medium amber, bottle conditioned. Aroma is moderately malty (toasted bread/grain), lightly hoppy (flowers, orange), lightly yeasty (cobwebs, mold), with notes of peach, straw. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, moderately acidic, moderately bitter. Medium body, watery/velvety texture, lively carbonation. Could use a more richness and aromatic allure, but for what it offers, it’s very pleasant and very drinkable. Like the Xxtra saison, it’s only fault is in what it lacks.

Rastacouere (6123) - Montreal, Quebec, CANADA - DEC 20, 2005
Huge foamy head raises fluffy and mountainous over the highly sedimented orange hue. Very doughy nose has that fluffy character from bubbly farmhouse ales. Fruit focused with orange up front, but approaching fruit salad characteristics. Interesting yeast in there, kinda musty and very estery, clementines like. This keeps on in mouth, where bready fruitiness dominates to our pleasure with the greatest precision. Not so complex, but evolving gracefully. Hugely bubbly palate, biting big bubbles activating the tastebuds constantly. Not my favourite from Thiriez, but still a remarkable offering in its efficient simplicity.

Bottle (750ml). Shared with R, blankboy, GregClow, DougShoemaker, and mds, courtesy of DougShoemaker. Poured murky orange with a decent lasting foamy tan head. Aroma of orange pekoe tea, mild dry hop medley, orange juice, gentle grains (barley, rye, ...). Taste is surprisingly grainy, even milder hop component, yeasty - reminded me of fresh rye bread. Very dry mouthfeel - overall tasty, not outstanding but no flaws here.
