We took our award winning Siberian Night Russian Imperial Stout and aged it for 11 months in fresh bourbon barrels. The result blew us away. The dark chocolate malt yields a milk chocolate flavor that blends perfectly with the vanilla flavor from the barrel. The bourbon aroma adds the finishing touch.

Dark black beer with tan head that disappeared almost immediately. Smells of heavy black caramel, coffee, chocolate, and raisin. Rich smokey, coffee ground, bitter cocoa. Almost herbal. Good.

Bottle back from Bestway in NC. Shared with EricTeusink. Pleasantly surprised at the complexity and texture here. Barrell adds to an already complex beer but in a complementary way. Aromas of vanilla and whiskey, a little bit of soy sauce. Flavor is more straight stout. Roasty malt and bittersweet with a little pepper spice on the back of the palate. Finish is chalky texture with milk chocolate flavors. A personal fave of mine when you can get that texture and rich chocolate in there. Lots going on and really complex but all working together well. A below the radar beer that needs to get some more love.

12 oz bottle purchased at Capone’s. Pours an opaque deep black. Head and lacing are minimal. Aroma is massive bourbon and chocolate malt. Flavor is milk chocolate, bourbon and Irish car bombs. Medium to full bodied, and delicious.

Bottle: Thanks Trevor: Served in a Chouffe glass: Brown head with black body. Nose of bourbon, dark chocolate, coffee, some sweet tar, herbal roast, earth, mocha, spice and roast. Very nice. Flavours of dark chocolate, mocha, spice, bitters, roast, sticky, cacoa, light wood tone, praline, some light whiskey/bourbon tints, some sweet roast (while not sweet) and a hint of hay roast. Aftertaste is malty, roast, dark chocate, mocha and praline. Low carbo, creamy oily foamy silky mouthfeel, full bodied and a creamy foamy ouly sticky texture. Delicious stuff.

Location: 12 oz bottle as pictured (gold foil), 2/9/15

Aroma: The nose is heavy bourbon, some sweet vanilla, chocolate, roasted malts, and a little ash
Appearance: This one pours a black color with a fizzy froth of brown head and some splotchy lace
Flavor: The flavor is sweet and bourbony up-front, with a heavy ashy, smokey finish to it
Palate: The body of this one is pretty full and fairly heavy, with nice, dry, smokey finish
Overall Impression: I’m not sure where I got this from, Kramer maybe? It’s had been in the back of the fridge for a while. This one is actually pretty unique due to that smokey/ashy flavor. It actually surprised me. I really appreciate how well it worked with the imperial stout and bourbon flavors to provide balance. This beer reminds that big beers like this can have depth of flavor, and that they don’t have to be straight booze on top of sweetness.

Milk chocolate, vanilla, and bourbon aromas are so appealing. Beer is black with a light brown head. Thick and full mouthfeel is deep with oak, bourbon, vanilla, and a rich chocolate flavor that blends really well. The alcohol is noticeable but doesn’t overpower.

Pours black with tan head. Aroma of bourbon, vanilla, coffee. Taste is vanilla, cream, and bourbon up front, followed by coffee, burnt malt and bitter dark chocolate. Really quite a change from sweet to burnt/bitter all in the course of one sip. Creamy mouthfeel. Good stuff.
