We took our award winning Siberian Night Russian Imperial Stout and aged it for 11 months in fresh bourbon barrels. The result blew us away. The dark chocolate malt yields a milk chocolate flavor that blends perfectly with the vanilla flavor from the barrel. The bourbon aroma adds the finishing touch.

12 oz bottle, poured into a snifter at ~45 degrees F. Appearance: Pours your usual RIS impenetrable black. Forms a fizzy head of deep tan bubbles, which dies rather swiftly - by sip #4, there was not even a ring. Carbonation lines the bottom of the snifter, making it appear almost tan at the bottom. Smell: Oak, caramel, and vanilla well out of the glass so thick you can practically fold them. There are hints here and there of dark stone fruit and chocolate, but it’s mainly that caramel-vanilla blend. Taste: Bourbon opens the flavor rush in a torrent of oak, caramel, and vanilla, almost exactly as the nose promised. As the initial burst of booze subsides to an undertone, bitter dark chocolate and dark-roast coffee manifest, with faint plum and currant rolling through as well. At the finish, the oak character surges back to the forefront, leaving an aftertaste of wood from a plum barrel, soaked in caramel and booze. As the beer warms, the plum and currant become bolder in the flavor profile while adding a hint of date, and the chocolate is joined by a touch of blackstrap, while the coffee fades a bit into the background. Mouthfeel: Full-bodied but not quite chewy, this beer glides smoothly along the palate. Overall: I’m glad this is currently a shelf beer for me, available any time I decide to purchase it. I’d put this up against most any hyped limited rare barrel-aged stout, and expect it to come in at least 90% as good, if not as good or better. Thirsty Dog knows what they’re doing in the barrel-aging department.

12 oz to snifter,black with small dark creamy head that left quickly, aroma of molasses,burnt,heavy alcohol, lacking the dark fruit and tobacco of the regular S.N. Med full body with average carbonation a bit thin for a RIS ,likely due to a bit to much bourbon. This is still a good beer

This is a damn good beer. Black pour with semi-creamy cocoa colored head and lacing. Hop bitterness is present, along with big bourbon and oak notes, some bitter/dark and sweet chocolate, vanilla, roasted malts. Boozy, It’s a sipper.

Pours a deep black with a small tan head that faded quickly. Aromas of vanilla, chocolate, roasted malts, wood, and faint bourbon hit the nose. Flavor was nicely blended with some coffee, chocolate, vanilla, roast nuts, oak, and mild bourbon. The bourbon wasn’t over-powering, but worked in nicely. Full body, sticky and oily texture, average carb, and a little bitter and mild burn to end. Nice!

Bottle split at Bruces pad - for the last time, big thanks to LKS, 27/03/15. Black topped with a decent tan covering. Nose is rich roast, dark chocolate, spice, dark fruit peel, earthy, molasses, toffee, light wood. Taste comprises milk chocolate, spice, earthy, dark toffee fudge, subtle bourbon strokes, fruit peel. Full bodied, fine carbonation, semi drying close. Decent BA impy.

Bottle. Jet black with a 1 finger mocha head. Intensely roasty with nice coffee flavors. Some oak, vanilla, dark fruit and chocolate support. Barrel character is subdued which really lets the base beer shine through. Rich sticky mouthfeel. Really excellent.

Bottle: Near black pour with a finger of creamy brown head… dissipates fairly quickly. Nose is sublime; bourbon and oak, chocolate, vanilla. Same translates to the taste… light roast and a swirling blend of flavor. Really nice. One of the better barrel treatments that I can remember. Creamy feel and a slightly heavier than average feel. Looking back I had the original eight years ago (scored a 4.4) and this is an equally impressive experience some 2200 ratings later… outstanding. Admittedly my tastes have changed and so has the way I rate beers… really stands out in this case. Thanks a ton to JStax for sending this a while back.

Poured from a 12 oz bottle. Aroma is roast forward with a light smokiness and a touch of smoked meat. Medium chocolate notes with some medium light bourbon character. Hints of oak and leather, some light sweet caramel. Pours black with a small, moderately thick, mocha head with good retention as it recedes to the edges where it lingers. Light lacing and moderate legs. Flavor is moderately sweet with some nice chocolate, caramel and burnt sugar. Hints of smoked meats and leather. Moderately high bitterness with low oak and bourbon. Medium roast character, stronger in the finish. Medium light alcohol spice as well. As it warms it becomes more roast forward with more leather and ash. Mouthfeel is medium full to full bodied with medium low carbonation. Low astringency and medium low alcohol warmth. Overall, a nice beer with balanced roast and chocolate notes. Good background bourbon notes. A slight meaty and soy sauce character, but it disappears mostly as it warms.

Swan Song at Bruce’s. Opaque dark brown beer, tidy tan head. Palate is airy and semi dry. Mild fine carbonation. Dark chocolate malts, little dark fruits. Mild bitterness. Modest bourbon brings a little spice. Semi dry finish. Well joined up.
