We took our award winning Siberian Night Russian Imperial Stout and aged it for 11 months in fresh bourbon barrels. The result blew us away. The dark chocolate malt yields a milk chocolate flavor that blends perfectly with the vanilla flavor from the barrel. The bourbon aroma adds the finishing touch.

Draft at HopCat, Grand Rapids. Deep garnet to charcoal body, medium light brown head. Nose dominated by aromatic coffee beans, thick cocoa, and roast. Hot body with lots of charred malt buffeted by bitter, tannic oak and hot alcohol; also coconut and coffee beans.

On tap. Pours with a black body and a lasting tan head. Aromas are pretty straight forward: alcohol, barrel, a bit of coffee and dark roast. Flavors are a touch thin. Dry, coffee, whiskey, roast, oak, vanillin. Slick mouthfeel with low carbonation.

Draft at Capones for Black Friday. Black with off white head. Roasted malts, coffee, anise, vanilla and toffee. High carbonation, average body, somewhat sweet with some vegetables and bourbon and oak on the finish along with a heavier booze compliment.

Draught at Capone’s: Aroma of malt, chocolate, slight Bourbon, and a hint of oak. Poured pitch black in color with a small creamy, dense, brown head that diminished but lasted throughout as a film on top of the beer, as well as around the edges. Opaque. Very slightly sparkling. Excellent lacing. Flavor is medium sweet. Tastes of malt, Bourbon, coconut, vanilla, light alcohol, toffee, milk chocolate, and slight oak. Full body. Oily, creamy, then dry texture. Average carbonation. Malt, Bourbon, light alcohol, vanilla, slight oak finish is dry. 11%ABV is noticeable in the flavor, but not hot.

Draft at Capones in Norristown, PA. Pours pitch black and completely opaque with a one finger light beige head. Decent retention slowly fading into a lasting ring. Spotty lacing left behind. Roasted aroma with a good bit of toasted oak and burnt malt. Not much bourbon, only slight booziness. Dark malt presence with chocolate, coffee, toast and oatmeal in the nose. Medium bodied but on the fuller end with some chewy dark malt, toasted oak and subtle bourbon. Bourbon stronger than in nose but still not hot or that prevalent in the flavor. Ashy with burnt toast, dark chocolate and oatmeal. A bit thin in the finish. Not overly complex but still decent. Could use more barrel swetness and bourbon.

Opaque black with a medium sized, tan head that left nice lacing on the glass. Aroma of roasted malts, cocoa, burnt wood, light bourbon, and alcohol. Taste of roast, coffee, dark chocolate, burnt wood, vanilla, light whiskey, and some alcohol in the finish.

UPDATED: JUL 18, 2013 On tap at Capone’s 2011 Black Friday. A: Deep black-brown body. Thin khaki cap, decent retention, spotty lacing. S: Loaded with acetone/nail polish remover vapors. Highly boozy with minimal malt shining through T: Like the nose, there was a huge dose of boozy, acetone like notes. Mild roasted malt and a dash of chocolate could be identified. M: Despite the flavor and taste issues, the beer had a decent mouthfeel. A little thin due to the ABV and general boozy character. O: Not sure what was wrong with this beer, but it was not good. Others that had a taste from my glass agreed.

Black pour with brown highlights. No head. Aroma of chocolate, plum, wood, and bourbon. Flavor is mostly chocolate, plum, toffee, and a hint of bourbon on the back end. Great beer!

On tap at Capones. Black brown with tan forth. Nose is chocolate and oak, light coffee and bourbon. Medium to full body with a tingle. Taste is chocolate and bourbon with hints of plum and vanilla. Barrel aging works great with the base beer if you like bourbon.

Draft @ Capone’s, 5oz served in a mini snifter. Pitch black with a creamy beige head. Nose is assorted chocloates(bakers, dark, malted milk balls) and a sharp, astringent alcohol burn in the finish. Barrel dominates the taste with flavors of whiskey and charred barrel, but some roasted malts and chocolate make their way through. Medium mouthfeel with just enough carbonation. Unfortunately, the wonderful base beer has been ruined by the barrel.
