COMMERCIAL DESCRIPTION
Saison is a style with very humble beginnings as a tablr beer brewed in the farmhouses of Wallonia. A Saison is brewed using more hops than other Belgian styles, making it a very durable beer. Traditionally brewed in spring, it was meant to last through the summer and autumn.

We brew our Saison with traditional, continental ingredients, using a sour mash of Weyermann floor-malted Pilsner Malt, Wheat, and Toasted Wheat. We finish with a healthy addition of Saaz hops, dry hop with our propietary blend of Estate Hops (CT grown in our New Hartford Hopyard) and spice with a light touhc of Black Peppercorns. We then ferment with a renowned Saison yeast, which adds subtle hints of bubble gum, clove and fuity esters to the aroma and flavor.

We partnered with wineries on the CT wine trail to source an assortment of wine barrels from Chamard, Hopkins, and Jonathan Edwards wineries. Each type of barrel contributes its own flavor and aroma, which blends to create a truly unique Saison.

A true "cellaring" beer, our Saison will delight as a fresh bottle, and will develop new flavors, aromas, and complexity as it ages.

Draught: This one pours a clear golden color. There was a small white head on it that leaves some lacing. It has a good nose. Floral, spice, earthy and some wheat. Some faint fruits also. The taste is good. Wheat, hints of lemon, earthy hops. Nicely balanced.

Hazy golden color. There are some fruity esters, with hints of pineapple, kiwi, grape, and melon. Just enough hops for balance and a hint of spice. Not much peppercorn.

Murky gold, large bubbled white head. Grassy and creamy nose, light milk lactic but no sourness, very pleasant. Soft lotion flavor, milk and kiwi glide across mid of lemon. Finish is woody, lightly tannic with grape skins, lasting through long finish. Pleasant and well balanced if not very adventurous. No peppercorn.
