COMMERCIAL DESCRIPTION
Cask & bottle; Special.
The Heather Honey Stout was brewed using a single temperature infusion mash, utilising a complex malt grist including English chocolate, brown and peated malts. English Fuggles, American Palisade and Willamette hops were chosen for a fruity and earthy finish. Additionally, we added in locally-sourced heather honey from Sheffield Honey Company. The Stout was initially matured for 6 months: a third in brsnd new French oak casks, a third in Pedro Ximinez sherry casks and a third in former red Bordeaux wine casks. The beer was then blended back together and conditioned for a further period to allow the flavours to meld. It has been conditioned in bottle using Champagne yeast and more heather honey. The Stout pours near-black with a tan head, giving aromas of heather, oak, coffee, chocolate and liquorice. The mouthfeel is incredibly rich with full and complex flavours of lavender, raisins and dark chocolate gained from the marriage of the beer, heather honey and extensive barrel aging. The result is an astonishingly luxurious beer which can be savoured now or enjoyed in a few years time.

Bottled 500ml@VWPBF Dark black color, small steady beige head. Toasted, a bit sweetish aroma. Full-bodied. Very roasted, coffee, some sweetish notes. Intensive with long lingering roastyness.

Sample from bottle @sbwf13. Black with tan head. Aroma is sweet, roasted malt, chocolate, honey, wood and whisky. Taste is woody, honey, roasted malt and soutish notes.

SBWF 2013. Pitch black beer with a nice lasting beige head. Roasted chocolate aroma, caramel, biscuits, raisins, licorice, some cocoa, floral notes, some leather. Roasted chocolate flavor, honey, caramel, licorice, ash, hop notes, some woody notes. Chocolate finish with caramel, licorice and some honey.

Bottle (Stockholm Beer Festival 2013) - Black in colour. Plain chocolate, coffee and a hint of honey in the aroma. Rich and roasted taste with plain chocolate, coffee, liquorice and a hint of honey.

Cask at Borefts 2012. A black beer with a thin beige head. The aroma has notes of roasted malt, alcohol, and soy sauce. The flavor is sweet with notes of roasted malt, coffee, alcohol, and soynsauce, as well as light notes of tar and honey, leading to a dry roasted finish.

Bottle from Coppers, Newcastle. This is an inky black beer that pours with a quickly disappearing brown head. It has very rich chocolate, coffee and smoked flavours, sweet honey notes and more smoked malt on the finish. SUPERB!
