The Heather Honey Stout was brewed using a single temperature infusion mash, utilising a complex malt grist including English chocolate, brown and peated malts. English Fuggles, American Palisade and Willamette hops were chosen for a fruity and earthy finish. Additionally, we added in locally-sourced heather honey from Sheffield Honey Company. The Stout was initially matured for 6 months: a third in brsnd new French oak casks, a third in Pedro Ximinez sherry casks and a third in former red Bordeaux wine casks. The beer was then blended back together and conditioned for a further period to allow the flavours to meld. It has been conditioned in bottle using Champagne yeast and more heather honey. The Stout pours near-black with a tan head, giving aromas of heather, oak, coffee, chocolate and liquorice. The mouthfeel is incredibly rich with full and complex flavours of lavender, raisins and dark chocolate gained from the marriage of the beer, heather honey and extensive barrel aging. The result is an astonishingly luxurious beer which can be savoured now or enjoyed in a few years time.

Bottle at home... Deep dark black... Big bubbly tan head... Soft dark sweet honey... Soft roast... Definite himrnez... Heavy roast.. Over sweet... Light roast... Soft toffee... Light bitter 3.7

Tasted at 4th BBF @ De Molen. Black pour. Aroma of honey, chocolate, flowery. Flavor is sweet, chocolate, honey, some bitterness. Nice body, nice balance. Subtle and great.

From cask at Borefts 2012. Pours dark as Coke, with a small tanned head. Aroma of honey and urine. Taste is heavy dark malty, honey coming home at the end of this one, rather sharp on the edges, good.

Draught @BBF’12: Some brown bubbles on top of a black beer with a ruby shine. Smell lot of honey, some plastic, some lightly roasted malts, not much else. Taste roasted grass & hay, honey, flowers, some tar, coffee, honey flowers, bitter. Bitter roast honey aftertaste. Low carbo, soft oily mouthfeel, medium to full bodied and an oily texture. The smell was not that nice, the taste was pretty different, but I like the idea and the taste with honey.

Cask at Borefts 2012. Black with a thin brown head. Notes of oak, tobacco, smoke and chocolate can’t prepare me for the taste, which is a gorgeous sweet blend of honey and chocolate fudge that just seems to keep ascending in lusciousness as it slides down the throat. Deserves the score for the way it seamlessly works that elegantly simple combination into a higher art.

From cask @ Borefts 2012. The pour’s deep brown with a tiny off-white head. The nose is honey comb, fresh-cut herb, sweet grassy grains. The taste is big herbal honey, compost (in a good way), chocolate malts and plenty of toffee. Big body, syrupy. This could’ve been a mess, but it works pretty well. Yet more impressive work from Thornbridge.

One of the positive surprises of the festival! Very dark brown. Brown head. Very nice complexity with roasted malts, heather honey, barrel notes. Nice oily body and good carbonation.

Cask @ Borefts 2012. Deep dark brown color. Big aroma of flowers and honey. Honeyish sweet, syrupy flavor, didn’t trace the Bordeaux barrel however. Slightly herbal and roasted.

On tap at Borefts 2012, Bodegraven. Pours black with a fine, beige bubble head. Rich, pure honey in the nose, along with some dark malts. Big sweet flavor, lightly alcoholic, with sticky honey and burnt wood. Medium to full bodied with fine carbonation. Warming finish with deep, lasting honey, dark bread, light bitter cocoa, sturdy roast. Great, true honey character here.

On tap at Borefts 2012. Dark brown black with a decent beige head. Aroma is heather honey, farmyard, vanilla, hint of chocolate. Slick on the palate, medium bodied with a bittersweet finish. Taste is honey, vanilla, burnt sugar, oak.
