COMMERCIAL DESCRIPTION
Cask & bottle; Special.
The Heather Honey Stout was brewed using a single temperature infusion mash, utilising a complex malt grist including English chocolate, brown and peated malts. English Fuggles, American Palisade and Willamette hops were chosen for a fruity and earthy finish. Additionally, we added in locally-sourced heather honey from Sheffield Honey Company. The Stout was initially matured for 6 months: a third in brsnd new French oak casks, a third in Pedro Ximinez sherry casks and a third in former red Bordeaux wine casks. The beer was then blended back together and conditioned for a further period to allow the flavours to meld. It has been conditioned in bottle using Champagne yeast and more heather honey. The Stout pours near-black with a tan head, giving aromas of heather, oak, coffee, chocolate and liquorice. The mouthfeel is incredibly rich with full and complex flavours of lavender, raisins and dark chocolate gained from the marriage of the beer, heather honey and extensive barrel aging. The result is an astonishingly luxurious beer which can be savoured now or enjoyed in a few years time.

Cask (gravity) @ 4th Borefts Beer Festival 2012, Brouwerij de Molen, Bodegraven, Netherlands.

Clear dark black brown colour with a small to average, frothy - fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate to heavy malty, roasted, chocolate, hether, honey. Flavour is moderate to heavy sweet and moderate bitter with a long duration, burnt bitter, honey sweet, heather. Body is medium, texture is oily, carbonation is soft to flat. [20120928]

UPDATED: OCT 8, 2012 From cask at Borefts. Pours pitch black with a small tan head. Aroma is heather and honey, sweet. Smoked, tarish and hney to herbal heather. Sweet and almost sticky meady. Sweet and light fruity finish.

Bottle. Pours a black color with a small tan head. has a roasted malty spicy honey and heather aroma with hints of chocolate. Roasted malty weak woody spicy heather and honey flavor with hints of chocolate. Has a roasted malty spicy honey and chocolate finish.

Borefts Beer Festival IV. Day 1. Very dark red beer, little pale tan head. Palate is dry and low carbonation. Rich honey and a trace of apple. Mild floral notes and well buried dark fruits. Exhibits some hops bitterness in the finish. Drier than I would like but a tasty and inventive number. No idea it was Bordeaux Barrelled! Drinks well below it’s abv.

Cask @ Borefts 2012. Deep dark brown color. Big aroma of flowers and honey. Honeyish sweet, syrupy flavor, didn’t trace the Bordeaux barrel however. Slightly herbal and roasted.

Draught. dark brown coloured. Dense light brown head. Aroma: Honey, roast, soy, chocolate. Flavour: roast, tar, smoke, some sweetness. Medium bodied. Tarry and roasted light bitter.

On tap at Borefts 2012, Bodegraven. Pours black with a fine, beige bubble head. Rich, pure honey in the nose, along with some dark malts. Big sweet flavor, lightly alcoholic, with sticky honey and burnt wood. Medium to full bodied with fine carbonation. Warming finish with deep, lasting honey, dark bread, light bitter cocoa, sturdy roast. Great, true honey character here.

Black in color with a khaki head. The nose is pretty acidic. A lot of roast, some floral heather notes, and a touch of vinegar tartness in the background. The flavor is surprisingly bitter. Quite roasty with some cocoa and coffee. A bit of heather and floral flavor in the background. Not a big fan of this one.
