Opened at the 2013 end of year Ottawa tasting, #317 of 817 - thanks Sylvain! Viscous black pour with no head. Fresh green chilli peppers is the first aroma followed by charcoal, some coffee grinds, leather and burnt malts - very similar to an aged DL but with chilli added with a full body and mild+ carbonation, although on the finish it becomes surprisingly thin (for DL). Definitely an odd combination but very happy I got to try this.

Pours coffee with no head or lacing. Nose was quite soya. Tastes were big chili heat, some vanilla and some espresso. Not really getting the cognac. Taste was big spicy, my nose was running! Oily in the mouth with lots of carbonation.

A deep dark stout with no head. In aroma, bitter chocolate with soy sauce, chili, coffee grind, very herbaceous. In mouth, a superb sweet chocolate with thick soy sauce, pinot de charente, chocolate liqueur, and hot pepper in finish, muy mexicano. Xmas Ottawa gathering Dec 13 2013.

Bottle from Godofthecellar. Aroma is barrel, vanilla, and sweet chocolate. Flavor is the same, BUT if you like spicy foods, this is amazing. I get that some like mild everything, but this is the best spicy beer I've ever had by far. Spice is up front on the tongue and perfect amount of spice. From notes on 2012-07-28: Woah, spicyness ahead! Bottle 76/817.

Lemme make something clear right off the bat: spiciness is *not* a flavor. Itís a sensation, and itís often overused to mask bad (or bland) flavors by lazy/incompetent chefs. When used properly, it augments the existing flavors to enhance the overall experience. We cook at home with habanero peppers almost every week because they are delicious; the spiciness they impart is merely a bonus we happen to enjoy. If you canít stomach intense heat like that (which is often a physical -- not mental -- limitation), do not drink Cognac De Muerte anytime soon. :)

Anyway, ancho chiles jump out in the aroma as green peppers and sweetness melt into the booze. Taste is dominated by chiles though, with relentless heat burning the back of my throat after each sip. Yikes, that is hot! Hard to notice the roast and cognac-y, fruity sweetness when the chiles overpower everything like this. Even for a guy with an above-average tolerance for spicy food, this is a little too hot after every sip. The heat distracts you from appreciating the delicious imperial stout underneath, and that stout is quite good. If you have a bottle of Cognac De Muerte, sit on it for another ~6 months; the spiciness should subside dramatically by then. Still, I actually really like this beer, and thatís truly surprising to me because although I love peppers in savory foods, I typically despise them in beers, desserts, and other sweet dishes. And thatís a testament to how good the barrel-aged RIS underneath is.

Would love to revisit this in 6 months.

Bottle, many thanks to kermis for opening this. Bottle #472/817. Pours a pitch black, headless beer with the aroma of peppers, molasses, chocolate, red fruits, oak and roast. One of the most complex aromaís Iíve ever had. Amazing. Flavour is a whole other story. Chiliís dominate the palate, giving it a burning sensation on the mouthfeel. Behind the peppers is slight sweetness and cloying stickyness. Virtually no carbonation. Very nice brew, extreme. The peppers making it more extreme, but not better...
