COMMERCIAL DESCRIPTION
Imperial Brett IPA fermented with the unique strain of yeast Brettanomyces Lambicus. This yeast creates earthy barnyard notes along with pineapple-cherry pie aromas and flavors. Of course with the "IPA" style it’s hopped heavily. Simcoe and Chinook are the culprits for the "Cat peed on the Christmas tree" aroma.

Smell of brett, hops and fruit. Flavor was slightly sour with a nice hop character. Pretty interesting beer. Would be interesting to see how this ages with the bret even thoughits an ipa

On tap at the brewery. Nice citrusy aroma with a subtle vinegar smell. Taste is very complex, with tropical hop resins and bretty metallic bite. One of those beers that is great at first, but towards the end of the glass some of the flavors are amplified as they linger on the palate.

Bottle; Pour is clear medium gold, with a frothy, fine bubbled white head in this glass. It retains well, with modest lacing present here. The nose is musty bread, tropicals, and pine needles ; It is... well. An IIPA with Brett, afterall - The flavor profile works better than expected - the bitterness from the hop profile is lighter than expected; balanced out by the dustiness and the dryness present from the brett here. Bread, must, sure.. more tropicals, pine, and pineapple really. A touch of tangerine rounds it out. This is interesting. It nearly works well.
