Seriouly, a gorgeous copper pour in a trappist at the Weber Grill in Schaumburg. Hi-ABV evident, but nose and palate are unassuming... To light. Not there.

Bottle. Thanks Al. Pours a somewhat hazy gold with a decent white head. Aroma of fruit, malt, and spice. Taste is fruit, spice, grain, yeast, and malt. Enjoyable Tripel.

Nice aroma of some candied fruits. Golden color with a frothy head. Nice sweetness up front. Complex flavors of citrus, plum, and spices. Bitterness is even and cuts sweetness nicely. Smooth finish. Outstanding.

On tap at the source. Looking forward to the new brewpub space, btw ... Currently, with a band is tough in the building, and the patio works about 20% of the time in Illinois -- we froze on July 2nd, for heavens sakes. Orange pour. Aroma has sweet fruits, lemon, tangy. Taste is strong, somewhat alcoholly, fruit, lemon. Tangy yeast. Decent. A touch strong 13 6

On tap at Bigby’s Pour House in Addison, IL., displaying a lightly hazed, deep golden color, with a modest layer of white froth to the head, and lacing that was as bubbly & wavy spray. The nose began with slight yeast attributes of banana & spice, then esters as apricot & citrus, as orange. A modest, but pleasant alcohol presence introduced the taste, followed by a moderate & lingering hop bitterness that was earthy, and slightly rind-like. Light to medium bodied, with decent carbonation, followed by a bit of tanginess, and lingering sweetness that made me question attenuation, and a lack of finishing dryness that always peaks my enjoyment of this style of Belgian Strong Ale. Fairly tasty, nonetheless.

Spicy hops overwhelm the nostrils. White fluffy head sits on a golden body. Good carbonation. Despite the high alcohol content it is very easy to drink. Not so much of a yeasty presence I would expect from a belgian style triple.

Flight pour on tap at the brewpub (Mundelein, IL). Pours a rich yellow glowing hue, touches of gold glow, a rich haze, with a frothy whitish head atop, laces well as a wall. a firm film. Aromas are gentle touches of fruit, some honey and banana, touches of lemon, and bready malts. Yeasty life comes full focus, with spice and life. Bready mellow malts, dough, a touch of honey and crisp estery fruits. Initial is as expected, sweeter, some estery fruit, honeycrisp apples, gentle honey, bread and dough. Some zesty yeasty life, touches of spice, but a sweeter vanilla honey and fruity body add up. A touch of ABV heat, some life, as the body does tone itself down into the middle. Mellow sweetness, a bunch of apple and bread dough, touches of pear, gentle spice and dry touches of bitterness. Finish is firm, lingering sweetness, touches of Candi sugar, honey, and apple/pear fruit qualities. Just a touch of bittering let’s this beer’s spice and sweetness (especially) linger on. For body, it’s not bad. Less sweet than I’d expect for the style that wins a point or two from me. From a style I generally dislike, this is one of the better ones. Lemony essence and less sweetness wins favor from me.
