This is the typical Tilquin blend used for making Oude Gueuze Tilquin à l’ancienne, which means a blend of 1, 2 and 3 years old lambics from Boon, Lindemans, Girardin and Cantillon, but which was intentionally not refermented. Therefore, it is flat. Once aged in bottle, this blend would give an Oude Gueuze Tilquin à l’ancienne. To avoid any refermentation and carbonation, this blend is kept in the fridge. It is served on cask only on festivals and opendoors as a traditional flat lambic, and sometimes sold to local bars.

Vat at WSF 2015. Clear golden - no head. Wooden. Light sourness. Mouldy. Light acid. Lovely. Light mouldy. Light sweet wood. Wood juice. Refreshing sourness. Lovely high drinkability.

(On cask at Moeder Lambic Fontainas, July 24 2015) Pours hazy dark gold medal medium lingering white cask head and lace. Aroma fresh cheddar, lactic, lemon and orange peels, moderate to strong Brett basement, dried leaves, some old hops, wood is fairly light for style. Sulphur really comes out as it airs. Bright and funky on the palate with lactic yogurt and lots of oranges, with some underripe pit fruit, lemon, big tart citrus juice acidity, and undercurrent of peach skin, herbal hops and oak. Funk is dry earth and a bit of sulphur. Finish is dry, a bit tart, and almost astringent from hops. Smooth light to medium mouthfeel. This is really good! Complexity and balance of a gueuze without the refermentation and a lovely cask mouthfeel.

Le style lambic n’étant pas le style de bières que je privilégie habituellement, je pourrais déguster cette bière encore, encore... toujours. Le nez est délicat, doux sans être sucré, et sens le vieux lambic. Rien d’acide, on est dans la subtilité. Le malt est un support magnifique à cette bière fraîche dont les principales saveurs me font penser à celles émanant d’un vieux pain. Frais, court sans être sec, un grand coup de coeur ici!

Tap at Moeder Lambic. Little hazy orange color, big white head. Aroma of acidity, funk, lemon, barnyard. Taste is medium sour, tart, funk with flavor of lemon, sour apple, wine.

Draught at Moeder Lambic Fontainas. Almost clear deep golden liquid with medium white head. Aroma of lemon, apple skin, light funk, grain and mineral. Taste is dry and light to medium sour with notes of apple skin, mineral and lemon. Medium bodied with low carbonation. Really nice lambic. Complex and balanced.

Cask at Moeder Lambic, 17th June 15. Pours dark straw yellow, aroma is sweet and sour, old hops, some funk, some cheesy notes. Taste is funk, straw, slight sour, multi layered, very drinkable and refreshing, not astringent, really great

Pours@source, SA/SU 10e TdG 2015. Near-gelatinous deep yellow baxter pee pour with a meaty gravitas oozes with a spectaculary funky, confronting yet cultivated sense of drinkable dirt and sweat: heavy cheese notes (jonge Gouda), sweat, chunky meaty fruit esters (fleshy stone fruit), lemon zest, spectacularly cheesy old hops. This blend is all about the exploring the drinkable textures of the animalistic, instead of the limits of the sour - , a true relief when encountered on a 2-day sour spree. Mouthfeel is nearly chewy, flat and gelatinous, offering some sweetness as a firm base puddle for lemon rind parfait and grapefruit pith and even sweeter orange peel to shine in. Juicy, milky, pineapple sweet finish. Many-faceted, gorgeously unbalanced, dirty surprise that betrays a welcome wild "Southern" imprint.

Trübe orangegoldene Farbe, sehr wenig weißer Schaum. Geruch trocken, säuerlich fruchtig, Kraut, gering pelzig. Geschmack malzig, sauer, gering Kraut, trocken, hefig.
