COMMERCIAL DESCRIPTION
We first sampled this cider on an unseasonably warm winter day while grilling. This is one of our experiments gone awesome. We smoked a few apples from our farm over pear wood, then fermented and aged them with a base blend of fresh-pressed Sonoma County–grown cider and heirloom apples. This dry, aromatic cider is tart and bright, with a mellow smoky finish. Imagine drinking a brut champagne near a bonfire. Pour into a flute, tulip, or pilsner glass to experience its aromatics. Pair with aged cheeses, grilled meats, and seafood. Nice apertif!

(Bottled) No head. Golden body with lots of micro-bubbles coating the inside of the glass. Light aroma of wet campfire ashes after a light afternoon rain in the mountains. Flavor is definitely not your normal cider. However, the smokiness is subtle to a point that it tastes more like something aged in wood, than having the apples smoked. Tastes alright. But, not worthy of the $8.99/12oz. bottle they’re charging at Berkeley Bowl!

375ml bottle pours a dark, straw gold with some light bubbles. Maybe a little head clinging to the edges. Nice nose, sweet apple cider, a little hard wood smoke, some candy, a little bubblegum. Flavor is sweet, apple juice, pears too, wet apple skins, not as much smoke as the nose. Clean, crisp finish.

Pours orange-hearted gold with a slight white fizz. French cider aroma, winey and tart. Flavor is lightly smoked, tending toward iodine and ethanol, thin in body, light dilute apples and cheap champagne.
