Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze’s special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.

15cl sample from bottle at the 9th Bruges Beer Festival 2016 (7 II 2016). Crystal clear orange coloured brew with minimal white foam. The nose has a tart, lemon and fruity nose. The mouth is full of carbonation, lemons, lots of citrus fruits. The taste maybe is not that complex - though I wouldn’t say it is flat - making it a real refreshing quencher. Very good, with an overwhelming dry and lemon sensation.

7.1.16 -Flasche-0,33L-bottled_2009. Goldgelb, klar, weisser Schaum, der sich rasant abbaut. Aroma: Barnyard, Zitrus, Aceto. Antrunk zitrisch und sauer, nicht schlecht, aber ziemlich eindimensional.

Slightly hazy golden color with white, foamy head. Aroma is intense and fresh. Farmhouse funk, hay and lemons. Taste starts sour up-front. Piercing lemon, grass, floral notes, not really funky on the taste. Also no bitterness. Body is medium bodied and highly effervescent. Very clean and fresh but lacks some complexity.

January 3, 2015. Bottle, marked L13/09.
Hazy orange with a small white head. Aroma is lemon, grapefruit, green apple, leather, horse blanket, hints of vinegar, funk and barn. Taste is very sour with lemon, some vinegar, dry woody notes leaving to very dry and sour, mouth puckering, finish with light horse blanket and barnyard notes. Light bodied, very dry finish, average carbonation.
Decent, not a lot of complexity but more straightforward sour and citric.

Bottiglia. Colore ambrato chiaro con una schiuma fine che sparisce molto presto. Aroma moderatamente acido e citrico, in bocca si fa abbastanza prepotente la parte citrica rimanendo a lungo nel palato. Niente male

Vintage 2013 (says the cork). Hazy orange color with white head. Aroma is bright citrus and green apples, fresh bretts, but not too funky. Overall a bit faint for a lambic. Taste is more bright citrus flavours and green apples. Tart finish, sparkling carbonation. Not too complex and very citrusy-sour, but an okay Oude Geuze. Only for sourfans (which I admittedly am). Maybe it is still a bit too young.

Pours a slightly hazy, pale golden straw color with a two finger, pillowy white head that slowly settles into a lasting ring. Spots and streaks of soapy lace left behind. Pretty pale and almost clear on the edges but otherwise looks pretty good. Musty aroma with a prominent earthy barnyard character but it’s not too funky. Slight horsey character with damp wood, funky bugs, cobweb and lactic cheesiness. Dank basement and oak along with light fruit and citric acidity. Hints of apple and lemon peel sweetness countering the earthy bugs and lactic funk. Pretty tame/delicate by lambic/Oude Gueuze standards but still smells authentic. Tart, puckering and way more sour than I expected. Strong sour acidity but not harsh or acetic. Dry with crisp, champagne-like effervescence and a very strong citric acid flavor. Prominent lemon juice flavor with lingering acetic vinegar but its not solvent like at all. Slightly earthy and musty with a decent lactic presence but overall not too funky. Some light fruit sweetness as well. Feels like there is some artificial sweetners in there. Dry finish. Decent sourness but not very complex and the mouthfeel falls off toward the end of the palate. A decent attempt at the style but kind of tame(once your palate adjusts to the initial sour shock) and one dimensional.

It pours murky gold with copper highlights and clumps of lees; the head is off white and foamy. The aroma has notes of: barnyard funk, lemon juice, cashews, and blood orange. The taste is heavy sour with a medium saltiness; there are notes of: the aforementioned aroma notes and cracker. The palate full bodied, has medium carbonation and a medium finish. Overall, it’s impressive to see this caliber of beer from Timmerman given their track record.
