Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuzeís special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.

Hazy orange golden with a small white head. Aroma of sour lemons, citrus peel, slight funk. Flavour is similar, nice pungent sourness. I like a little more cellar funk in my Lambic, but the intense tartness makes up for it.

Bottle: Nose is white wine, white grape, slight apple, honey, cellar, dust slight leather in the finish. Taste is very, very tart, green apples, white grape, leading to a surprisingly sweet note in the finish. Mouthfeel is slick despite high carbination. There is not the funky depth of a great oude geuze but this is a good, and certainly the only Timmermans Iíve actively liked.

375 mml bottle tasted on 05/02/2014 in Brussels. Apple dominates all the categories. The carbonation is fine and the balance is good. Next one please.

2012 Bottle. Hazy gold with a head that vanishes straight away. Aroma of damp hay, apricots, lemons, apples. Lowish carbonation, kefir-like texture. Broodingly sour and a bit woody with lemons and apricot kernels, apple skins. Rustic and pretty full on.

375ml bottle. Pours a hazy straw gold, with a smallish white head, which lasts reasonably well, without leaving much lacing. White currants, grape, leather and a strong sourness make up the aroma. A touch of white wine and strong white currant up front lead into a powerfully sour mid-palate. Mild leather and oak mix with the sourness in the finish. This is nice enough, but is perhaps a touch too sour, and certainly not as complex as the best gueuzes.

The beer poured a golden haze with a little head on top. The flavor of the beer is sour with some flowery notes. A great Lambic and one of my favorites. If you like sour beer then you must try.

750mL bottle, bottled 4/17/13, drunk on 1/11/14
Deep golden brass body is bright, with plentiful small bubbles producing an initially large, but mostly receding white head. Plenty of sediment left behind in the bottle. So far so good...
WOW! Is this a bottle of Cantillon gueuze? This is the closest aroma to Cantillonís gueuze that I think Iíve smelled outside of Cantillon beers. Sulphur, burnt rubber, full-on valeric acid tartness, wood tannins and a fair amount of barnyard. Very good strength of aroma as well, and just infinitely sniffable. I seriously doubt you could tell this apart from some cantillon gueuzes in a blind smelling. Itís also entirely possible that I have a big bias to that sulphur/rubber note and because itís so present here and in Cantillon, that Iím being a little blinded to the rest of the aroma.
The flavor dosent disappoint either, being nicely dry, woody and quite lactic. Soft, oily mouthfeel belies the relatively high amount of carbonation. Lemons, oranges, barrel tannins and plentiful barnyard character are all present here. Itís perhaps a touch too sweet on the finish, and dosent have quite the depth of some of the best (not as much weird funk) but itís tough to find flaw with this batch. Shockingly good, but cantillon gueuze is also my favorite beer, so again, Iím pretty biased to gueuzes that are similar to it.

Bottle at home, from Beermerchants.com, 01/01/14. Hazed orange with moderate off white spotting anf edgework. Nose is tarte lemon, dank hay, barnyard, dry rot, citric tinged straw, rotting apple core. Taste comprises burnt straw, tangy lemon jus, citric dankness, musty wood, soured grape skins, musty wood, dry rot. Medium bodied, gentle spritzy carbonation, crisp clean execution. Decent guezue, not massively complex but ticks all the boxes.

Bottle. Pours gold with a white head. Tart lemony acidity, some dusty funky notes, and a lingering acidic and dry finish. Nice and bright and drinkable. Good stuff.
