Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze’s special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.

Bottle. Pours yellow with white and quickly disappearing head. In aroma funky, tart fruits, lemon, barnyard with oaky notes in the finish. In flavour very tart and acidic but not too much in vinegar way, fruity and oaky. The beer is dry, low bodied with fizzy carbonation. Very drinkable, well done gueuze.

Bottle from Berts Bierhuis Biltstraat, BB End 2030, large sample. Clear yellow color, medium bubbly head. Aroma of sweet funky geuze, barnyard, horseblanket, slight sweet grainy malt, funky, bit flowery. Mostly citric acid with a little bit of lactic acid. Quite sharp in tartness, soft bitterness. High carbonation. Slight sticky sweetness as well. Not a lot of depth and balance, but still a decent enough geuze.
