Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze’s special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.

75 cL bottle at Delerium. Pours hazy yellow with a small white head. Aroma is classic barnyard yet quite smooth though. Flavour is light citrusy and subdued yeasty spiced. Mild wheaty touch. Bitter and milky finish. Lovely and rather genuine stuff.

Bottled. Cloudy pale golden, small head. Striking citric sweaty horse blanket aroma. Bone dry, tart and very sour. Spritzy and vinegary with mouthpuckering sourness. Not as complex as the best geuzes, but quite extreme in it’s sourness.

Hazy gold beer, good off white head. Palate is light, dry and crisp. Usual gueuzey sournss, ie wet wood, dried fruits and a little lemon acid. But it’s mild and not too puckery. Dry finish. Pleasing.

Blind tasting at De Cam. Clear winner versus De Cam, Boon, Cantillon, Giradin, and Lindemann’s. Quite the unexpected result. We liked the complexity of this one, and wer not ovrwhelmed by simple sourness.

Corked bottle from Beer Planet, Brussels, bb 2028
Darker shade of blond, hazy, with giant rocky head. The aroma is initially mild; but under the foam it reveals apungent acetic smell, followed by some cellar smell too, and bit of lemon. The mouthfeel is very dry, without concession to any smoothness, and the carbonation is very high; very acidic, with strong lemon presence, but clearly missing the funky character of the best Lambics, the animal, the cellar, the cobwebs and the rest.
Pleasant sour drink.

Bottle at home in London with Lyoli and Sander. Pours hazy gold, lightly effervescent with a fine, creamy white head. Nose has some tangy lemon, mild funk, tangerine. Medium sweet flavor with stirring sour citrus, some squash, more tangerine. Medium bodied with fine to average, massaging carbonation. Clean and sour to finish with further tangy citrus fruits, mild sweat, light jammy citrus. Quite drinkable and refreshing.
