Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze’s special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.

This is one of the tamest lambics I’ve had. The strength of this beer is that it’s refreshing and easy to drink. The weakness is that it isn’t very complex or interesting. It does have lambic character, however, with plenty of sour grapefruit and some pine needles and barnyard funk. It’s just not as wild as the really good lambics.

375 ml. brewed 2012, bottled 10/06/2015. Lightly foggy, orange-golden body has some vigorous bubbling that supports a lasting thin film of bubbles. Nose is tart berry, cherry, white grape and lemon mixed with some cellar funk and honey then doused in cider vinegar. Big tastes of fruity vinegar, lemon juice, tart grape and berry. Also has a bit of funky cheese and an undercurrent of caramel. Can’t really fins the oak. Light-medium bodied brew has high carbonation and a big acidic sour, but also a slight stickiness.

750ml bottle pours clear pale orange with 2 finger fizzy head. Nose is very funky with lots of skunky weed, tangerine, citrus and toast. Taste is similar, high acidity, some sweet fuzzy stonefruit, dusty oak, toast, skunk. Finishes very sour, juicy peach, farm, horseshit, medium dry light sweet citrus fruit. Solid stuff.

375 ml corked & caged green bottle, from the Norwegian importer. Brewed 2011, bottled 2014, limited edition. ABV is 5.5%. Golden colour, large white head. Intense aroma of farmhouse / brettanomyces, hints of lemons and white wine vinegar. Extremely sour flavour, brett, lemons and white wine vinegar galore.

Bouteille 375ml au Québec Ratebeer Gathering. Couleur jaune pâle translucide, fine mousse blanche. Arôme de levures sauvages, un peu boisé. Goût de funk, acidité élevée, un peu astringente. Carbonatation faible, corps moyen.

A blonde Gueuze with a thin white head. In aroma, sweet fruity malt with light Epsom salts, light Brett, light lactic notes, light buttery notes, OK. In mouth, a nice tart Gueuze with loads of Epsom salts, light Brett, ground cherries, lactic acid, lemon pulp, nice and complex. Bottle at ratebeer Quebec gathering.

Bottle. Golden hazy. Barny nose, hay malty, dried apples, unripe pears, old hay. Slight tart, apple vinegar, drying finish. Intense flavour, long, Pretty nice. Good authentic gueuze flavour, bit sharp, lemony, lemon peely. Nice.

Bottle. Pour is slightly hazy gold with a medium white head. Aroma is subdued - light lemon, light acidity, light mineral, light floral notes, and faint citrus. Not too much in the aroma. Flavor is tart and salty up front with lingering sourness and light floral notes. Ever so slightly funk in the finish. More of a sour ale but really quite drinkable. The sourness is present and long but not overpowering. Nic .
