Just to round off the recent yeast obsession we’ve had the over last few months we managed to source a traditional German Wheat style bottom fermenting yeast. Using a bottom fermenting yeast was new for us, as our house strain is a top fermenting. We needed to select a hop that complimented the characteristics of a traditional German Wheat beer so we opted for Amarillo which gives a citrus orangey flavour without masking or overpowering the yeast profile and aroma. For the malt bill we kept it traditional by using German Pilsner and Wheat malt.

Hazed golden color with fine white head. Ok mild aroma with some herbs/grassy, wheat and mild citric. Medium body and a soft carbonation. Ok balance between sweetness and bitterness. Wheat, herbal/grassy and mild citric. Ok easy drinkable wheat ale.

From tap at Dogstar Craftbeer Bar, Wien. Aroma of slightly sourish wheat, citrus, fruity notes, hops. Flavour is moderate bitterness. Body is light to medium. Nice hoppy Wheat Ale.

Tap@ Angleterre. Pours pale golden with a thick white head. Citrus fruity with some tartness in aroma. Wheat, spices, citrus fruits in flavor. Creamy mouthfeel. Crisp, but I don’t like the tartness here.

Keg at the Hanging Bat. Pours hazy good with a thin white head. Aromas of hop funk, spice. Taste is tropical fruit, light bitter, some wheat. Clean finish.

Tap at GJBF Osaka 2015. Unusual, funky and wheaty nose, seems like German hops instead of Amarillo. Mild, thin, lemonade-like color. Soursh, funky initial, mild wheaty tanginess in mid, and some citrus notes in mid and final. Thin-medium body, and dry finish. Funk-funk-funk (though I know it’s not really funk). Very good, refreshing stuff.

Tap at Beer Fes Osaka 2015. Funky nose, wheat, lemon, grapefruit, cat piss. Almost bretty. Light and somewhat thin, crisp, grapefruit and bread. Very dry. Good.

On tap at GJBF Osaka 2015. USA Wheat A cloudy yellow lemonade color with a wheat + lemon/lime aroma. Medium bodied with a decent mouthfeel. The taste is a bit of cardboard like wheat cakes, lemon and spice. Interesting.

Draught. Hazy golden body with white lasting head. Aroma is fruity with bananas and spices. Taste is a little bit dryer than a German Weizen with some malts and hints of spices. Aftertaste is more bitter than a German Weizen and also lesser malts. Nice and refreshing.
