Just to round off the recent yeast obsession we’ve had the over last few months we managed to source a traditional German Wheat style bottom fermenting yeast. Using a bottom fermenting yeast was new for us, as our house strain is a top fermenting. We needed to select a hop that complimented the characteristics of a traditional German Wheat beer so we opted for Amarillo which gives a citrus orangey flavour without masking or overpowering the yeast profile and aroma. For the malt bill we kept it traditional by using German Pilsner and Wheat malt.

Tap@gallows. Pale yellow, hazy. Strong fresh citrus, lemony slight ginger, nose, wheaty malts. Bitter, med light body, dryish finish. Hoppy citrus and wheat flavour, clean, some sweetness in finish. Summerale. The sharp bitters and citrus feels a bit harsh, wheat ipaish.
