Back into the Emptiness is our rose-hued Saison fermented in local wine barrels with French Policeman grapes grown by our pal Tom Culton at Culton Organics in Lancaster. PA. Fermented with our house microflora from Lancaster, PA. Back into the Emptiness, Forever!

Our beers are equally inspired by the farmhouse brewers of France and Belgium and the pioneering, heavy handed brewers of America. We produce our beer in small batches, twelve legs at a time.

16.9 oz bottle, French Policeman version. Clear orange with pink tints. Nose is sour citrus pith, oak, white grape and white pepper. Juicy medium body with a crisp tang. Taste is green apple, lime, grape skins and wood. Lacking that hint of sweetness the aroma offered. Sour fruit finishing vinous.

Bottle thanks to Vin! Pours hazy amber, small white head, nice lacing. Aroma and flavor are very vinous, white grapes and oak, notes of bretty funk. Medium light body, effervescent. Good.

Bottle shared in London during Jack the Sipper’s farewell. Huge thanks to Colin for this one. Pours hazy honey-gold with a frothy white head. Big tart berry aroma with notes of orange, lemon and grape candies. Light sweet flavor with bracing acidity, grape Smarties, light rind, berry skins. Light bodied with fine, spritzy carbonation. Dry finish with more cleansing acidity, lemon, dried grapes, light wheat. Solid overall.

Bottle split at Jack The Sipper leaves for the FBI again tasting, from a trade, 14/07/15. Hazed orange with a moderately appointed off white swirl and edgeing. Nose is light must, apricot, white grape, straw, pissy leanings, apple pie. Taste comprises tangy citric rinds, grape must, light acidic tingle, lemon rind, balsa wod=od. Medium bodied, fine carbonation, drying close. Decent tarte saison with a little puckeridge.

Farewell Jack bottleshare at Craft Clerkenwell. Thanks to Colin. Very hazy gold beer, thin cream coloured head. Palate is smooth and semi dry. Mild fine carbonation. Pretty tangy white wine vibe, edging toward sour. Mild lemon peel. Light semi dry finish. Tangy linger. Not bad.

Bottle @ The Clerkenwell Share. Thanks to whoever shared this! Hazy deep orange pour with a small head. Peach and plum fruit salad. Growing assertive plum aroma. A bit of wood. Sweet bubblegum. Taste has more juicy fruit bubblegum and plums. Fruit leather. Light tart buggy delicateness. Medium body, fine carbonation. Nice stuff.

Bottle share at CBC Clerkenwell, many thanks to Leighton. Browny wax, 7%. Hazy orange, still, small bubbly head. Aroma is balsamic, apple cider vinegar, honey and lemon tea. Body is medium, tingly carbonation, foamy. Taste is grapes, powdery, sour sherbet dibdab, chewable vitamin C. Tangy stuff. Interesting slow drinker.

Bottle thanks to Cloin. It pours cloudy gold with a small white head. The nose is soft, juicy, grape juice, wood, light lactic twang, mustiness, earth and tangy notes. The taste is crisp, tart, tangy, sherbet, sour grape, vinous, grapefruit, gooseberry, dry wood and earth with a wood-driven finish. Medium body and fine, prickly carbonation. Crisp, tart and juicy. Rather decent stuff.

Bottle shared at craft beer co JackL leaving drinks. Huge thanks to Colin. Translucent golden orange coloured pour with a fine white head. Aroma is woody, apple, light musty , tangy grape. Flavour is zippy zesty lemon, tart, tart lemon fizzy sweets. Palate is quite tart, zippy, highish carbonation. Good.

Thnx to Mike ! Pours hazy blonde, small white head. Nose is full on funk. Taste is dry, funky. Sourness is elegant but intense. The grapes are very hidden and only contribute to a touch of complexity, more than actual taste. carbo an MF are very well done too .
