CultonSour is a Berliner Weisse which underwent a 24 hour lactobacillus fermentation before being innoculated with our house Saison yeast (and the yeast/bacteria from Tom’s cider). The end result is reminiscent of a fine Basque Cider: Bright and acidic with notes of fresh pressed apples, bright lemon, and white grames. 49% of the fermentable sugar came from Tom Culton’s amazing Heirloom Apple/Pear/Quince cider.

On tap at Tired Hands. My 100th TH rating! Milky straw with brief froth. Nose is earthy apple, peels and custard. Crisp and clean with a bright tang. Taste is sour apple, pear and lemon. The fruit sings with just enough sweetness shining through.

4oz pour at the brewery. Pours a slightly hazy yellow with zero head. Nose has lots of obvious lacto, tart green apple, yogurt. Flavor is the same, tart apple, yogurt, a little bit of kombucha, seltzer. Tart, slightly acetic finish. A little residual sweetness would have rounded out the edges.

Growler shared at Dadsgiving, big thanks to Dallas, 24/11/13. Hazed pale blonde with little in the way of a head dress. Nose is tarte peach, soured fruit mash, orange, straw, citric dipped grass. Taste comprises tarte lemon rind, bitter orange, soured pear juice, straw, light funky notes, touch acidic. Light to medium in bodiment, fine carbonation, dry grassy finale. Decent Berliner.

Growler at Dadsgiving! Pours a lightly hazed gold with a thin white head. Soft musk on the nose, a touch of fruit. Big and tangy, bright acid with a touch of lemon. Gorgeous, easy drinking, spicy tartness. Absolutely lovely.

On draft at the brewpub, pours hazy straw golden with very light head and not much lacing. Aromas of apple skin, cider, tart lemon and grain. Flavor is most of the same with apples, hops, minerals and pear skin dominating the flavor. Light to medium bodied. I enjoyed this

Bottle. Pours hazy light yellow with a white head. Light tart and lemony, with a wheaty base and a nice dry finish. Crisp, clean, lightly acidic, and very drinkable.

On tap at the brewery. Aroma is fresh cider, tart pear, lemon juice, and a bile funk (in a good way). Pours murky dull yellow with no head. Taste is great with a lemon forward tartness, sweet cider, and just a hint of vinegar funk. Great berliner with a sweet apple complimenting it. These guys are making some cool ones.

Growler at Dadsgiving. Pours cloudy yellow with white head. Nose and taste of lemon cake, green apple, citrus, light bread, acid and malt tartness. Lighter bodied.

pours a slightly hazy pale yellow with a medium white head. aroma has some tart lemony notes, mild kiwi/melon notes, slight cider and funk. flavor is lightly lemony and tart at first but switches over to funky/cidery...very reminiscent of isastegi but less funky and without bandaid...more tart. Mouthfeel is light and the finish is sligtly appley/lemony and tart. i really dig this one.
