COMMERCIAL DESCRIPTION
Distinguished by black wax on the 375 ml bottle. A dark saison that was barrel aged in Jim Beam whiskey barrels which once held Weyerbacher Insanity and half was aged in local Chadds Ford Winery red wine barrels with bacteria.

Bottle @ GTís house. Just about black in color with a tan head. Aromas of cranberry, roasted malt, and grape skin. Whiskey, oak, and dark chocolate. Some subtle caramel sweetness and sour berries. Flavor is sour with just a touch of sweetness. Plenty of cranberry, raisin, and mild balsamic vinegar. Roasted malt, dark chocolate, and a hint of chalk. Enjoyable.

As someone who absolutely loved Guillemot (it was the best beer I had when I visited TH) this was something of a letdown. It wasnít BAD by any means, but the whiskey barrels seemed to muddle the nose a bit into less than the defined roasty character of the original Guillemot and the finish was substantially more acetic than in the base beer. Retained the nice raspberry jam flavor but just a lot harder to drink. Good but far from the masterpiece that base Guillemot is.

Bottle - thanks callmemickey! Pours opaque black with a medium creamy brown head that has good staying power and nice lacing. Aroma is roasted malts, grape, tart cherry, yeast, pepper. Flavor is the same, slightly vinous, light sweet, light tart, some woody astringence. Dry finish, with some bitterness/astringency coming through as well. No real whiskey notes per se, but there is a sort of generic spirit hotness about it. Medium body, silky mouthfeel. A nice beer, but a tad bit offputting on the far finish.

Pours a nice brown/black with offwhite head. Aroma is great; floral, berries, musty, bread, pepper, and light vanilla. Taste is nicely tart and very oaky with a lot of grape/berry character and a complex spicy yeastyness. I cant get enough of this one. GREAT BEER.

375 bottle shared at Berliner Bash, poured a dark brown color with aromas of tobacco, wine, dough, vanilla, alight bourbon, and roast. flavors follow suit, rich flavors, mellow barrel character, solid beer overall thanks for the share.

Poured a very deep brown with light foamy head which dissipated quickly. Smell of wine, grapes, bourbon and dark fruit. Light sourness with a warming sensation.

375mL black wax thanks to Greenplastic615 on BA. Clear, dark cola brown pour looking black in the Oerbier glass. Medium, richer mocha foam. Thicker, healthy delicate lacing. Nose is really phenomenal: vanilla and buttery bourbon/oak meld with red wine and French truffle/genache. Taste reminds me of the very best bottles of RR Consecration and De Dolle Oerbier Reserva. There is more "roast" and mild coffee present, but the Oud Brune character is phenomenal, perhaps one of the best ever for this style...and it is my favorite style. Red wine acidity, extremely soft lactic backend, balancing bitter chocolate and coffee. Palate is exquisite- dry and juicy, not overwhelmingly sour. Easily one of my favorite beers of all time...cannot believe how good this is!

My second pour in the Oerbier glass, quite apropos, confirms that this will be the first 5.0 score I have ever given seriously after nearly 6,000 beers reviewed. Past 5.0 scores included Celery Beer, Kangaroo Brew, and a Chernobyl barleywine all for past Ratebeer April Foolís jokes. But now, I am dead serious. If Oerbier Special Reserva 2007 is the best oud bruin on the planet and oud bruin is my favorite style (thanks to my cousin introducing me to Duchesse De Bourgogne at the age of 18), then Guillemot Nebula adds to Oerbier Reserva with more pronounced oak vanillin and sharper buttery bourbon richness in the nose. In the taste it adds an imperial stout like roast and dark chocolate semi present in Oerbier Reserva. In palate, similar perfection of saltwater, lime juice, mild hop bitterness, and dry oak tannin. The nose of Oerbier Reserva can sometimes get some off putting phenols especially in non 2007 bottles that severely dampen the experience. Here the phenols are absent. The nose is twice as rich. The taste blending the great POWER of imperial stout with the great delicacy of oud brune and sours in general. It combines the best of two beer worlds: the rich and bold of the stout/porter world with the quenching and acidity of the saison/sour world. This is more approachable than a 100 IBU mega inky Russian Imperial Sotut. It is less aggressive than even the best of 3F and Cantillon lambics which though amazing can be lacerative and overpowering in large quantities. Here we have an unknown, modest beer created by one of the most talented brewers I have met who has (perhaps) accidentally fixed the inherent problem in great Imperial Stouts and great Lambics: they are far too extreme to consider a perfect beer. They divide. This beer combines. Two great worlds into one glass. The best beer I have ever had. Congratulations to Jean and the Tired Hands crew.
