COMMERCIAL DESCRIPTION
Distinguished by black wax on the 375 ml bottle. A dark saison that was barrel aged in Jim Beam whiskey barrels which once held Weyerbacher Insanity and half was aged in local Chadds Ford Winery red wine barrels with bacteria.

Draught@CBC2015. Amber colour, mediumsized head. aroma is fruity, floral, mildly zesty along with a slight acidic touch to it. Flavour is fruity, floral, wooden, some acidic notes along with wood, some funk and mild vanillaish notes.

Tap @ CBC 2015. Pours reddish black with a thin light offwhite head. Aromas of funk, red grapes, cherries maybe? Vinegar, oak, light balsamic, light roast, malts, chocolate. Taste is pretty balsamic, chocolate, malts, vinegar some black pepper.

Pours hazy brown with a few off-white bubbles. Aroma has notes of malt, red berries, funk, tartness, oak and some fruitiness. Taste is light to medium sweet and medium sour with a long oak, fruity, funky, sour and slightly dry finish. Body is medium, texture is thin to oily, carbonation is soft.

12.7 oz bottle, batch 1. Deep brown with tan froth. Nose is sour blackberry, oak, faint cocoa and red wine vinegar. Expecting this to be quite acidic but amazingly rich and creamy with a dull sparkle finishing lightly tart. Taste is cocoa, oak, earthy black cherry, red wine and cinnamon. Like a chocolate truffle that melts to reveal a sour fruity center. Reminds me of the Oerbier Special Reserves. Maybe their best.

Tap @ CBC 2015, yellow session. Light black with tiny lacings. Nose ha light roast with some light bitter tartness. Taste is roasty, stone fruits, tart, vanilla and light acidic.

Bottle at home with friends, courtesy of Armin. Thanks man! Pour is murky dark brown with a small tan head and decent lacing. Tannic, orange juice, caramel, wood, roasty, some wine notes, bread, and light roast in the aroma. Taste is roasty, light cocoa, somewhat sour, tannic, grapey, oaky, coffee, and leather with a big sour finish. Medium body with high carbonation. Pretty good, but a bit too acidic.

Bottle at home courtesy of Armin. Big thanks for this one man!!! Pour is deep brown with a small tan head and decent lacing. Big red wine, tart cherries, light bourbon, raisins, raspberries, spice, and caramel in the aroma. Taste is very smooth, red grapes, oaky, prunes, a touch of blueberries, light spice, light rum, and caramel with a lightly tart finish. Slick mouthfeel with soft carbonation. Very tasty stuff.

500 mL bottle with black wax @ Steve_0 during my 10k tick fest. Thanks Dave! Pine, dark chocolate, mint, light funk, and some grape in the nose. Somewhat tart. Heavy roasted chocolate malty, light caramel, oak, red wine, funk, light lemon, and mild tart flavor. Some burnt aftertaste. Cool.

Bottle @ Stephen’s house, courtesy of arminjewell. Thanks! Pours a clear dark brown appearance with a light brown head. Red wine, light whiskey, tart grape, somewhat herbal, a touch funky aroma. Whiskey, dark black cherry, red grape, grainy woody, mild vinegar flavor. The barrel characteristics really dominate over the base flavor.

Pour out of 500 mL bottle, black wax, thick black red pour with off white head, aroma brought notes of big dark fruit, oak, earth, slight red fruit, into a bit of vinegar, slight yeast. Taste was a mix of tart lemon, vinegar, red fruit, hints of oak into a bit of tart fruity,vinegar, finishing fairly tart.

Pour out of 375 mL bottle, dark brownish black pour with white/tan head, aroma brought notes of tart fruits, hints of biscuit, caramel, nice red wine, hints of oak, slight red wine, hints of sour fruits, nice sour notes, slight funk. Taste is a mix of tart fruits, cherry, hints of pitted plum, slight burning vinegar but not bad, hints of oak, finishing fairly sweet, but nice and sour and oaky. Very nice.

From tap at Copenhagen Beer Celebration 2015, Yellow session. Unclear brown color with beige head. Light roasted malty aroma with chocolate notes, light yeasty fruity - berries, wood, light wineous. Sweet bitter and light acidic taste. Medium oily body with soft carbonation.
