COMMERCIAL DESCRIPTION
Distinguished by black wax on the 375 ml bottle. A dark saison that was barrel aged in Jim Beam whiskey barrels which once held Weyerbacher Insanity and half was aged in local Chadds Ford Winery red wine barrels with bacteria.

Poured a very deep brown with light foamy head which dissipated quickly. Smell of wine, grapes, bourbon and dark fruit. Light sourness with a warming sensation.

375mL black wax thanks to Greenplastic615 on BA. Clear, dark cola brown pour looking black in the Oerbier glass. Medium, richer mocha foam. Thicker, healthy delicate lacing. Nose is really phenomenal: vanilla and buttery bourbon/oak meld with red wine and French truffle/genache. Taste reminds me of the very best bottles of RR Consecration and De Dolle Oerbier Reserva. There is more "roast" and mild coffee present, but the Oud Brune character is phenomenal, perhaps one of the best ever for this style...and it is my favorite style. Red wine acidity, extremely soft lactic backend, balancing bitter chocolate and coffee. Palate is exquisite- dry and juicy, not overwhelmingly sour. Easily one of my favorite beers of all time...cannot believe how good this is!

My second pour in the Oerbier glass, quite apropos, confirms that this will be the first 5.0 score I have ever given seriously after nearly 6,000 beers reviewed. Past 5.0 scores included Celery Beer, Kangaroo Brew, and a Chernobyl barleywine all for past Ratebeer April Fool’s jokes. But now, I am dead serious. If Oerbier Special Reserva 2007 is the best oud bruin on the planet and oud bruin is my favorite style (thanks to my cousin introducing me to Duchesse De Bourgogne at the age of 18), then Guillemot Nebula adds to Oerbier Reserva with more pronounced oak vanillin and sharper buttery bourbon richness in the nose. In the taste it adds an imperial stout like roast and dark chocolate semi present in Oerbier Reserva. In palate, similar perfection of saltwater, lime juice, mild hop bitterness, and dry oak tannin. The nose of Oerbier Reserva can sometimes get some off putting phenols especially in non 2007 bottles that severely dampen the experience. Here the phenols are absent. The nose is twice as rich. The taste blending the great POWER of imperial stout with the great delicacy of oud brune and sours in general. It combines the best of two beer worlds: the rich and bold of the stout/porter world with the quenching and acidity of the saison/sour world. This is more approachable than a 100 IBU mega inky Russian Imperial Sotut. It is less aggressive than even the best of 3F and Cantillon lambics which though amazing can be lacerative and overpowering in large quantities. Here we have an unknown, modest beer created by one of the most talented brewers I have met who has (perhaps) accidentally fixed the inherent problem in great Imperial Stouts and great Lambics: they are far too extreme to consider a perfect beer. They divide. This beer combines. Two great worlds into one glass. The best beer I have ever had. Congratulations to Jean and the Tired Hands crew.

Bottle, thanks to FooFaa, 06/04/2013. Pours deep brown, almost black, thin light tan head fades to a fizzy haze on the surface, dense lacing. Aroma is earthy chocolate and hazelnut, light spices and tart berries, some of the whiskey coming through with caramel, vanilla before a tart, vinous finish. Taste is more towards the tart side, starting with light chocolate roasted malts, acidic tart berries dominate the middle, and fruity vinous finish, bit of a grassy feel coming through rather than direct flavor. Full bodied, almost creamy. Really nice, lovely play between the sour and dark malts, the whiskey and wine.

UPDATED: MAY 1, 2014 Bottle thanks to Tom. This is like a lighter and more vinous version of the Prunus, alcohol might be a little more apparent though. I got a little green apple I think but it might be a mix of the acidity and some darker malts maybe. Alright, I didn’t take notes so I can’t write a full rating. Go ahead and drink it for yourself, this Guillemot serie is really hot!

bottle shared by tommyboy. pours murky brown with a very nice beige head, good retention and lacing. many similitudes with prunus, less fruity and sweet that is. pinot noir barrels, pepper and other spices, bretty funk, light sweetness - demerara and light chocolate, belgiumness - dark and spicy candi, very fruity - cherries again, despite their absence, light vanilla and oak, grassy and spicy and lightly acidic finish. soft and constant carbonation, light to medium body. i prefered prunus but this is an excellent BA brew!

Bottle. Dark brown pour with off white head, solid lacing. Lots of roasted malts dominate the aroma, charcoal, light sour woody, winey, notes. Taste is sour, roasty, rather subtle for the alcohol percentage, I was expecting a bit more of a flavor bomb. Palate is full bodied with med-light carbonation. Interesting for a black sour, usually not my style but this one maintains a high level of drinkability.

Bottle 375ml. Pours black with low beige head. Some lacing. Aroma is of roasted meat, fruits, alcohol, roasted malt. Taste is of fruits, roasted malt, alcohol, wine. palate: Full bodied. Overall: Good, entertaining. Alcohol not too well hidden.

Bottle sent to me by Jason! Opened at ClusterFork the Bruery 5/5/2013. Pours a clear brown to black with small tan head. Aroma is fruity, all spice and some coffee notes. Almost some butter. :/ Taste is more butter but not overpowering. No idea if this is really infected or if it is a remnant of a lot of tasters in the same glass with just water to wash in between. Still a nice level of lemon sour.

UPDATED: MAY 4, 2013 Bottle (375 ml). Thanks to Bruce, David & John. Dark brown with a small beige head and good lacing. Aroma of red wine, tart notes, slight roasted malt and berries. Taste is slightly sweet with sour grapes, red wine, tart notes, roasted malt, chocolate, slight wood and alcohol. Medium body. Mouthfeel is slightly dry. Winey. Good complex beer. Kind of sipper though.

Pours a murky dark brown, almost black with a paperthin off white head. Aroma of lacto, redwine and funk. Taste is sour grapes, cherries, redwine, vanilla , oak, bourbon and funk. Bitter and tart with a finish of roast and chocolate. One of the most complex beers I've ever had. Wow! ---Rated via Beer Buddy for iPhone
