COMMERCIAL DESCRIPTION
Distinguished by black wax on the 375 ml bottle. A dark saison that was barrel aged in Jim Beam whiskey barrels which once held Weyerbacher Insanity and half was aged in local Chadds Ford Winery red wine barrels.

Bottle shared with DMac. Pours black with tan head. Nose and taste of red wine, cocoa, wild yeast, oak, berry fruits and ever so light splash of whiskey. Very delicate mouth feel, Finishes with slight acidic berry fruits.

Bottle thanks to Tom. This is like a lighter and more vinous version of the Prunus, alcohol might be a little more apparent than it though. I got a little green apple I think but it might be a mix of the acidity and some darker malts maybe. Alright, I didn’t take notes so I can’t write a full rating. Go ahead and drink it for yourself, this Guillemot serie is really hot!

bottle shared by tommyboy. pours murky brown with a very nice beige head, good retention and lacing. many similitudes with prunus, less fruity and sweet that is. pinot noir barrels, pepper and other spices, bretty funk, light sweetness - demerara and light chocolate, belgiumness - dark and spicy candi, very fruity - cherries again, despite their absence, light vanilla and oak, grassy and spicy and lightly acidic finish. soft and constant carbonation, light to medium body. i prefered prunus but this is an excellent BA brew!

Bottle. Dark brown pour with off white head, solid lacing. Lots of roasted malts dominate the aroma, charcoal, light sour woody, winey, notes. Taste is sour, roasty, rather subtle for the alcohol percentage, I was expecting a bit more of a flavor bomb. Palate is full bodied with med-light carbonation. Interesting for a black sour, usually not my style but this one maintains a high level of drinkability.

Bottle 375ml. Pours black with low beige head. Some lacing. Aroma is of roasted meat, fruits, alcohol, roasted malt. Taste is of fruits, roasted malt, alcohol, wine. palate: Full bodied. Overall: Good, entertaining. Alcohol not too well hidden.

Bottle sent to me by Jason! Opened at ClusterFork the Bruery 5/5/2013. Pours a clear brown to black with small tan head. Aroma is fruity, all spice and some coffee notes. Almost some butter. :/ Taste is more butter but not overpowering. No idea if this is really infected or if it is a remnant of a lot of tasters in the same glass with just water to wash in between. Still a nice level of lemon sour.

UPDATED: MAY 4, 2013 Bottle (375 ml). Thanks to Bruce, David & John. Dark brown with a small beige head and good lacing. Aroma of red wine, tart notes, slight roasted malt and berries. Taste is slightly sweet with sour grapes, red wine, tart notes, roasted malt, chocolate, slight wood and alcohol. Medium body. Mouthfeel is slightly dry. Winey. Good complex beer. Kind of sipper though.

Pours a murky dark brown, almost black with a paperthin off white head. Aroma of lacto, redwine and funk. Taste is sour grapes, cherries, redwine, vanilla , oak, bourbon and funk. Bitter and tart with a finish of roast and chocolate. One of the most complex beers I've ever had. Wow! ---Rated via Beer Buddy for iPhone

Shared bottle. Thanks Tom! Pours dark brown with a khaki head. Aroma of fruit, wine, whiskey, and malt. Taste is dark cherries, grapes, whiskey, spice, and wood. Top notch.

Bottle from Tommy, thanks! Pours a dark brown with small beige head and little lacing. Aroma of roasted malts, light coffee notes, oak, light berries. Taste starts with some roasted malts, oak, some vinious presence, acidity, light funk. Low body and medium carbonation. Not a big fan of the style but still pretty good.

Bottle shared at Peg’s. Dark brown pour with an off white head. Barrel aromas. Muted Jim Beam and vinous notes dominate the taste with delicate sour sub tones. Good mouthfeel, balance, and carbonation.
