COMMERCIAL DESCRIPTION
Distinguished by black wax on the 375 ml bottle. A dark saison that was barrel aged in Jim Beam whiskey barrels which once held Weyerbacher Insanity and half was aged in local Chadds Ford Winery red wine barrels with bacteria.

As someone who absolutely loved Guillemot (it was the best beer I had when I visited TH) this was something of a letdown. It wasn’t BAD by any means, but the whiskey barrels seemed to muddle the nose a bit into less than the defined roasty character of the original Guillemot and the finish was substantially more acetic than in the base beer. Retained the nice raspberry jam flavor but just a lot harder to drink. Good but far from the masterpiece that base Guillemot is.

Bottle courtesy of Jean and Colin. Thank you! Pours blackish dark brown with a thin beige head that leaves lots of trace on the glass while dissipating. Smell is slightly sour, malty and fruity with roasted malts, dark bread, toffee, sour cherries, blackberries, raisins, red wine vinegar, moist soil, moist wood, leather and orange zest. Taste is slightly sour, malty and tiny fruity with dark bread, caramel, toffee, slightly roasted malts, lemon juice, moist hay, moist wood, butterscotch, dark grapes, moist soil and orange zest. Mouthfeel is soft, round, slightly dry, slightly tart and medium to full bodied. Finish is sour and slightly malty with roasted malts, toffee, burnt caramel, moist wood, sour cherries, moist hay, leather, blackberries, walnuts and orange zest. Quite amazing... Thank you for this treat!

Bottle sent by Jim awhile ago. A: Inky black with a thin mocha head. N: Leather, pinot noir grapes, tobacco, cocoa,coffee, lemon zest, caramel, oak, sulfur, apples. T: Sour, then bittersweet. M: Medium body. Sticky. O: An interesting sweet/sour concoction wherein I prefer Prunus. For a black saison, this isn’t too shabby, that’s for sure.

375 thanks to Luke. Pours a dark brown color with a small beige head. A sour vinous nose, cherries. The flavor is cocoa, dark malts, a bit of sour cherries, funky at times, brett, vinous, red wine is clear, brown malty base with sour red wine. Pretty harmonious and solid.

Bottle sample from "writerLJBerg". Colour...very dark brown with a thin tan head. Nose...sharp, pungent and funky with a vinous aspect that permeates the sinuses. Palate...dry, tart and tannic with tremendous vinous flavours and sharp tannins. There’s loads of orchard fruits and anise as well as dark cherry, dark raisins and figs. The finish is long and dry. Thanks to jtclockwork for sending this my way. From notes. Shared this with OldMrCrow a few months ago -- I really shouldn’t wait so long to enter these. Anyway ... Appearance: murky dark brown, somewhat red tinge. Offwhite head. Huge aroma - leather, tobacco, cherry, oak, loads of vanilla, some "twangy," tannic elements. Dark chocolate, with a little spice reminiscent of Mexican cocoa. Taste: spicy almost. Muddled dark sour that’s hard to describe. Winey, somewhat sweet, not particularly cohesive though. Just ... well, a lot of kitchen sink. A lot of cool things in the aroma that don’t really come together in any special way in the follow through. Body feels a little thin. Medium body, soft carbonation, plus a bit of copper late. Overall: I’m not crazy about this one - feels like there’s a lot going on, but it never comes together to be anything more than a cool cacophony.

Bottle... This beer rocks!… Pours dark brown with a small, short-lived, off-white head. The bouquet offers notes of black cherry and deeply roasted, carbonic malts. Full-bodied and silky with airy carbonation. The flavor is fruity, tart and roasty. Finishes tangy, roasty and a touch raspy. Thanks to landhoney for sharing this world class brew!

375mL bottle, pours a deep dark mahogany with a small beige head. Nose brings out red wine, oak, whiskey and yeast - very interesting stuff. Flavour is fantastically complex, with notes of red wine and whiskey, atop a dry vinous base and lots of wild yeast. A beer of remarkable elegance and complexity. The ABV hides itself surprisingly well. Fantastic.

Dark pour, reasonable white head. Leather and tobacco, super vanilla whisky oak and red wine tannins. Flavor is dominated by red wine early, lime tartness, milky hot cocoa coming on strong through the middle.

I realize I’m coming in way far on the low side here, but that’s what I’m getting. Bad luck to follow a decade-old Iris? Maybe. This one is interesting, certainly, but it’s trying too hard to be all of the latest coolness. Trying too hard is OK for imperial stouts. Saisons should just be.

Bottle courtesy jtclockwork shared at the January 2014 tasting in Santa Cruz. Pours dark brown with red highlights. Deep, challenging, complex aroma. Cranberry, tobacco, chocolate, ash. Flavor is fantastic, with a beautiful lime and cranberry acidity, sour cherries, dark chocolate, lime yogurt, slight roast and ash. So full and elegant.

Bottle, enjoyed on two occasions (04/2013, 11/2013) - reviewed from notes. Thanks to TheEpeeist for the first and somebody I forgot for the second. Aroma is funky leather with moderate notes of tobacco, dark fruit leather skins, musty barrel, earthiness and tart cherry. Fantastic deep aroma. Pours a cola brown with sporadic tan head that fizzes to a thin sheet with minimal lace. Taste is light roast, acidic red wine, tart cherry and dark grape skins, funky barnyard, vanilla, whiskey, light bakers cocoa. Great interwoven funky, earthy and tart fruit flavors. Body is light with medium-high carbonation. After taste is leather with a lingering wine tartness. There is a soft note of astringency but it gets washed away from lingering wine/fruit. Incredible dark farmhouse beer. When opened fresh there was more fruit leather on the aroma but with several months more funky and earthy aromas began to develop. Definitely sits at the top of the style with Sante Adairius Love’s Armor and Hill Farmstead Edith.
