Distinguished by black wax on the 375 ml bottle. A dark saison that was barrel aged in Jim Beam whiskey barrels which once held Weyerbacher Insanity and half was aged in local Chadds Ford Winery red wine barrels with bacteria.

As someone who absolutely loved Guillemot (it was the best beer I had when I visited TH) this was something of a letdown. It wasn’t BAD by any means, but the whiskey barrels seemed to muddle the nose a bit into less than the defined roasty character of the original Guillemot and the finish was substantially more acetic than in the base beer. Retained the nice raspberry jam flavor but just a lot harder to drink. Good but far from the masterpiece that base Guillemot is.

[5/1/15] Draught sample at Copenhagen Beer Celebration 2015. 1st session. Dark brown. Aroma of wine, fruitiness. Sourish flavor, vinous, woody, fruity, a bit bitter, with a bit of caramel. Medium-bodied.

Bottle; Pour is cola brown, with amber highlights in this glass - the khaki head is very modest here - light spotting present. Appearance would be the biggest flaw of this brew - The nose is rich dark fruit , vinous, earthen barrel - with an off note as well. The flavor profile is sublime - It’s always interesting to see the Euro rates on american brews with wild notes - well. it always goes the same way (humorously negative) . The mouth feel is velvet smooth - the blend from vinous to earthen cocoa and ash is almost as perfect as it could be - and that’s the element of this brew that sticks out as I progress through this bottle. Slight vanilla, roasty malts, acetic, cherry notes, and lemon tart - damn. The concept of dark saisons is as unappealing as "black" ipas. This works for me - as well as any I’ve had thus far
